I’m almost 70 years old and have had seizures since 3 months old. By accident about 20 years ago I found out that most of the seizures were environmental. Most an allergic reaction to chemicals sprayed on farming fields. Since I’ve moved to Alaska and also on Keto. Maybe check into it. May God bless you and guide you also. Instead of using parchment paper, I use a large Ziploc bag that I have cut the zip part off and have cut one of the side seams. I can make 150 or so tortillas until needing another bag. Also, I wash the bag in between uses.

Thanks for the recipe Victoria. I have been buying keto tortillas but at $6 a bag, this is an easy and affordable option. Recipe idea-substitute keto tortillas can be substituted for lasagna noodles. You can’t tell the difference between the tortilla and actual pasta. My family loves it!

Ok, me again. I made these tortillas for my tacos tonight and they actually are like real tortillas. I was amazed!! I made them exactly as you demonstrated except added a little garlic powder and onion powder. I'm sure no one could tell the difference. They are truly amazing. Thank you so much!!!!!

Yum! I'd be making one change--lard for the butter. I was taught how to make authentic Mexican tortillas by my sweet Mexican nextdoor neighbor when I lived in Security, CO back in the mid 1970's and she used lard :)

To keep tortillas soft after making place in a plastic bag and the moisture from the heat will keep them soft. This is my experience with real flour made tortillas. I’m excited to try these though!!

Just finished you 2.0 mixture and my psyllium husk came in and now I get to make the other mixture. My non keto husband says the biscuits are good even if they are keto. He is coming around. ❤❤❤ I’ve been making my tortillas for several weeks now from my bread dough using your flours. I use gluten in my recipe as I love the texture and chew it imparts. So, of course, my tortillas have it as well. Knocks my socks off and blows the grocery store options out of the park. It’s still not a legit fluffy chewy regular wheat flour tortilla but it’s close enough to make this girl happy and content. Thank you for all your hard sciencing for us!!

@@geethaparasuram6338 I am adding VWG and right now my proportions are off. It’s such a disaster. My first loaf with her new flour worked great but not perfect. Then I saw her video about her recipe and weighing the ingredients and being very specific for optimal results and I thought hmm that seems smart. Maybe I could get my recipe to improve to my liking. 2 rounds in with crappy failures rofl 🤣 so now I need to try to remember how I was measuring before and replicate that. Sigh. But….roughly I was using 3.5 cups of VKF 3/4c VWG 2t salt 4 eggs (room temp) 2c water 2T yeast 1t honey 4T butter Makes 2 loaves or 1 loaf and about 10-12 tortillas. Alternately I’ve used half the tortilla portion to make burger bugs. About 90g of dough for a bun, 30g for a tortilla. I’ve been baking at 375 for 25 mins but it does fall some so next time I’m going to adjust the temp to 350 and see how that works out. Longer of course.

In the past when I made flour tortillas I got a thinner more even tortilla if, after the first press, I rotated the dough (still in the parchment rounds) and pressed one more time. It evened things out and you got a bigger thinner tortilla that nearly filled the parchment rounds. I assume that will work similarly with this dough. Can't wait to try it. I use hey, cut up gallon freezer bag and my tortilla press. Cut the end and the sides off and it works perfectly and is reusable. I don’t have an electric skillet so I did it in a cast-iron flat skillet. I have some corn flavoring in my cabinet from some other keto recipe years ago when I started keto. Never used it again 🙄 I’m just wondering how many drops of that I would use to turn these into corn tortillas 🤔. Thanks for another great recipe beautiful Victoria 🙏🏼

Great job!!!👏 Victoria, just found out Epilepsy can be caused by B Vitamin deficiencies. Plz make sure you have enuf and do not take supps that have cyanocobalamine or folic acid. Rather folate & methylcobalamine. A very good B vitamin is the one that goes under the tongue.

I don't see any full nutrition information listed, so in case anyone is curious this is what I was able to approximately calculate per tortilla (assuming 8 tortillas): Calories: 87 Net Carbs: 1.3g Fiber: 9.6g Fats: 5.8g Protein: 4.6g Its really helpful for me because in addition to keto I have been trying to maintain a calorie deficit, but its a fine balance to maintain and meet all the macro needs. For comparison La Tortilla Factory brand has a tortilla thats 60 calories, 14g fiber, 7g protein, and 0 net carbs, though I can't speak on the taste between the 2.

Hello. I found your channel few days ago, and after few videos I happily became a subscriber. You are doing a wonderful job, so please keep it up. With that said, I am confused a bit, but hopefully you can unconfuse me:):):) With the New Standard Keto Flour 2.0, you had said, and it is written that 1 cup weighs 84 grams. With the Victoria's Keto Flour!, which I call 3.0, you've said, and it is written that it weighs 82 grams per cup. In this video, however, you say that one cup weighs 70 grams, and that is a huge difference and discrepancy. So that is what my confusion is, and where it come from. Furthermore, the Victoria's Keto Flour!, even if we take the weight of 82 grams per cup and not 70 grams, this flour has half a cup more egg white protein and 20 grams extra in the form of a psyllium husk, yet it weighs less (per cup) than the New Standard Keto Flour 2.0. And that is my second confusion:):) The reason I am bringing this up is because it is obvious that you had worked, and continue to work very hard at these flour recipes, and I would hate to ruin a dish because I used 82 grams of your flour instead of 70 grams, or vice versa, and then blame the flour instead of grossly incorrect amount of the flour. Yes so 70grams per cup of vkf is the same absorbency as 1 cup of white flour. However 82 grams is the actual grams per measuring cup. Absorbency isn’t measured by grams. I give grams per cup so you can know how many carbs. But I give grams per recipe so u know what amount works “best” for that recipe.

So, point number 1: if I am using your recipes, just go by what it says. Point number 2: When I am using someone else's recipes, which calls for 1 cup of WHITE flour, then I substitute it with 70 grams of VKF, because of the absorbency characteristic, yes? I do not substitute 1 cup of white flour with 1 cup of VKF, correct? Or, am I still not getting it??:):) If I am getting it, then when WES was making Biscuits, and he was weighing it instead of using cups, when the recipe called for 1 cup of white flour, he used 84 grams of your NSKF 2.0, that was incorrect, he should have used 70 grams, correct?? That last question assumes that NSKF 2.0 has the same absorbency as VKT. Once gain, thank you, and God bless
