The best way to make sure the flesh of the shark doesn’t smell like ammonia is after the catch, you gut it, clean it, ice it… you bring the shark home and you let is soak in ice water over night. Through osmosis the ammonia will naturally leave the flesh. Hope this helps.

@SaltySamFishing yeah I what you mean. It's just funny when your at the fillet table on the pier. You start cutting up your rays, lizard fish, Dogfish or sharks. Then people start going you can eat them. I didn't know that. I also like bonnethead shark or Atlantic sharpnose shark. Anyways I just found your channel. Just caught (no fishng pun intended) you channel while I was searching for Spiny dogfish b/c of the PBS special called "Change in the Water" and one of the segments focused on local fishing and how a lot is shipped when it's perfectly good to be eaten in the U.S. and they did a piece on New Jersey and Dogfish, Ive asked my local fish monger to see if they can carry it but also wanted to learn more and your channel was very informative, I really like the fish school segment and of course then when you cook it so I can see some possibilities for the food. Well produced channel as well. Hope your channel starts getting more followers, it's solid. will subscribe.

Love the video. Finally, someone cooking what people call trash fish. Dogfish are delicious! I usually keep one or two when I bait fish. Same thing with skate. The reason why you didn't smell or taste the ammonia on the dogfish is because you cut the head and gutted the fish right away. If you waited, then urine or urea starts to brake down in their skin creating the ammonia smell. There's no such thing as trash fish, just trash cooks! Subscribed!

Geeze. When I go surf fishing, dogfish and skates are pretty much all I can catch. I've often thought about trying to cook one since they're so darn plentiful, but was told they are basically inedible due to tasting like ammonia. I guess it could vary from shark to shark, depending on various conditions and circumstances. Kudos to you for doing the experiment though! Maybe I'll test my luck and cook up the next one I catch.
