I heard the crunch. I just discovered your channel and I’m so grateful that you are keeping “Hispanic” cooking alive with fresh ingredients. No matter which region we are from. Your cooking mirrors many of my dishes and it’s a relief and an inspiration there are many of us who still take the extra steps to keep our traditions alive and not take short cuts which IMHO has lead to lazy cooking. Thank you for existing and having this great appreciation for our cultural cooking. We all relate cause food is universal, even if the process may differ, the end results are the same. I know this is an old post but Made this today and it was really good. Only thing I did different was cook it in the air fryer.. I added a little bit of baking powder for to make sure it was crispy but it’s not needed. This recipe is a keeper. Gracias!

Jessica Cruz The ingredients are a bit different than ours. We don’t add lemon. Puerto Rican’s usually make it with Adobe, Sazón, Black pepper , a bit of vinegar, and fresh garlic. Sometimes we’ll add a bit of oregano.

Believe it or not, many of us boil our chicken first. Set it aside & pat it dry. Let it sit until completely dry before you fry/bake it. It will already be fully cooked from the inside, so no more bleeding or pink on the inside.

I am a product of a Puerto Rican mother, Cuban father and Spanish(Spaniard) Grandparents and not once growing up (i'm 70) was cumin ever a spice in any of our recipes. my father worked 25 years in restaurant industry too. Not till I started watching KZbin was this a spice I ever heard of or would use.

You can definitely use bottle lemon juice. The flavor will still be pretty good. I do this whenever I don't have fresh limes in the house or when the limes are too expensive at the store. If you use drumsticks and put in the oven, just know that they will take a while to cook. I recommend roasting them covered at 375 for about 20 minutes so that they're juicing and then increasing it to 425 uncovered so that they crisp up. In total they should roast for about 45 minutes. I hope this helps!

Yep!!! As a rule of thumb, I usually marinate any meat for at least 1 hour before cooking. If you don't have time, no worries it's not the end of the world :) Food will still be delicious

When I say Sazon, I’m referring to the Goya Sazon achiote Packets. They’re pretty easy to find. If you don’t have Sazon available near you, powdered achiote and even paprika will do.

I leave it on and it makes the chicken extra cripsy. However, if you use the big drumstick feel free to take it off. The decision is yours. With the bigger pieces of chicken, I like to remove the skin sometimes because it helps create less of a mess.

The only thing I don't understand is you use something called "adobo" but never show it. Is the "adobo" Adobo powder by Goya? If so, which one because I believe they have more than one flavor of adobo powder.
