Potatoes are my most favorite food. If I had to or just because, I could exist on potatoes alone. Sadly,I would end up as fat as a house. As a kid it was all I would eat. Your hashbrowns are very fancy looking, but, in my humble opinion, would taste better without flour or egg -- just two table spoons of olive oil. The hashbrown should be a cross between a french fry and a potato chip, not a starchy cake. One man's opinion.

If you want the potatoes to get crispy you have to wash all the starch off after cutting because starch acts as a moisture barrier and you will burn them before you can make them crispy if you don’t
