I love to make salmon bowls with leftover salmon. I pretty much always have the rest of the ingredients on hand and it's very customizable and easy cause all I have to make, when using leftovers, is the rice. It kinda reminds me of tacos in a way cause you make the ingredients then everyone makes their own bowl how they like.
