I made these last night (used garlic powder and dried chives as my spices) and we ate them all. Didn't seed them. Used a tea towel to extract liquid. I don't think they taste like tater tots, but they were awesome. Kind of like mini zucchini quiches. Love this recipe, Dot! Absolutely yummy. Thanks for sharing.

I love these Keto Tater Tots. I make a double recipe almost every week and keep them in the frig for a no-thought snack. I don't use the pepper; I use some Italian seasoning.

I learned how to hand grate the entire zucchini by leaving the stem ON & tossing it into my stock bowl for later use. It stores nicely in the freezer with other bits of veggies that I add to a large size zip lock baggie. The cleanup time of the food processor isn't worth my time. Zucchini's are so easy to grate!

I was thinking the same thing. By the time I drag my food processor out from the bottom cabinet, set it up, clean it afterward, and put it back in the cupboard I could have shredded a box full of zucchini with a kitchen mandolin.

Hi Dot, Thanks for another great recipe. I just made this, but I added chopped chicken & bacon to it. I am thrilled to tell you, my zucchini hater absolutely loved it. Mom, why have you not cooked zucchini this way before, I really like it. This is now how I am making my pizza. I am using this recipe adding my meats into it and baking. Serving it with sauce & extra cheese on top. This was fast & uses less dishes. We really love the nutmeg added to our cauliflower mash. Thank you for all the great food.

I have made these 3 times now and they are so good. It is super important to get as much of the water out of the zucchini as you can. They will be crispier. I've seen this with cauliflower, but I just don't like cauliflower so this is a welcomed alternative.

i love this! i use zucchini for pizza crust too. i grate zucchini before freezing so its ready to go when needed. Some water will be drawn out from freezing so it is a little quicker to express the remaining moisture before adding to the recipe.

Growing up, my parents would always save and freeze the strained water from veggies (even most of the water used for steaming/boiling veggies) and used the water for broth in soups, stews, casseroles or to marinate chicken for added flavor or to add in dressing for Thanksgiving. It really was good. Perhaps this is excessive "recycling" but then we were kinda poor. lol :)

Hi Dot. I am chronically ill and I was eating like this and loosing weight. Then I went on a cruise last April and contracted Shigella from the food there and when I recovered, I fell off the low carb wagon. So I want to get back on as I have about 30 lbs. I need to loose. Thanks for giving me the nudge I needed to get back to it. This is a great way to eat and it was really working for me.

FYI -- Flax seed is full of an Omega-3 precursor molecule that your body transforms into Omega-3 fatty acids. The problem is that the precursor is NOT efficiently transformed into Omega-3 fatty acids. At best about 40% is converted, but that drops to about 10% as you age. So in order to get the Omega-3 fatty acids you need, you must eat several times the flax seed than you do something like Fish Oil.

Starchy Vegetables, sugars, and corn syrup in everything are where the carbs are coming from. Search youtube for oxylates and anti nutrients in vegetables. Get fat adapted and ease more towards carnivore asap. Those are what is causing everybody and his brother Chron's, IBS, SIBO, whole colon diverticulosis, diverticulitis, and ulcerative colitis, diabetes, HBP, and heart disease. Saw on the news, eating red meat is OK, and past advice to NOT eat it was bad advice, and that they were wrong.

I found putting the zucchini in my juicer extracts all the moisture and leaves the shredded pulp! I do the same thing with cauliflower...

Have you tried a celery root? I made a Keto stew recipe and cut the celery root into cubes like a potato I put it in the crockpot with other Keto veggies for 8 hrs in the crockpot it was a hit. My husband thought it really was potatoes.

Zucchini juice is usually kind of butter if you ask me. One time though i was making zucchini bread and used a really juicy one from my mils garden. I had to add extra flour and other dry ingredients. Then I added lemon extract and brown sugar cause they didn't have flavor. Anyway they ended coming out delicious zucchini brownies. My co-workers loved them this was not Keto then. I couldn't duplicate the recipe ever.

to seriously lessen the water content .... don't use the real onion (too much added moisture) ...try using minced or powdered onion to the batch. I learned this trick yrs ago for the real tots or patties. Works great. Thank you so much for your recipe ...it will really help

I made the taters but they didn't turn out as nice as yours. I didn't have that size of small cupcake pan mine was regular size. So I cooked them long and then I popped them out an cut them in quarters and put them back in the over for 10 min. But they taste amazing. Thanks for all your great cooking. Ideas.

I wonder if you could use a silicone type of baking container with small portion spots that are 1to 2 tablespoons per spot. Alot of utubers use these type when making fat bombs recipes. This could make tots smaller and more round shaped.
