You already avoid cholesterol, sodium, sugar and trans fats, but there's another potential culprit to avoid, and this one isn't listed on any label. "Advanced glycation end products," or "AGES," are formed in cooked or processed foods when amino acids or fats react with sugars, and they are believed to play a role in the causation of many chronic conditions. Dr. Joe Schwarcz, director of McGill University's Office for Science & Society, explains what you need to know about AGEs and how they can be avoided.

I don't think plant based diets are the best, many contain plenty of sugar. High protein diets tend to be kinder on the body. Even red meat and pork is ok another myth of the sugar based food industry.

Interesting stuff that I read about a long time ago, but needed a review. I will quit grilling my food. Stewing will be better.

I only eat meat.. usually medium rare,. I don’t eat any fruits or vegetables or grains and my inflammation is all gone finally 🙌🏻 I started cooking my meat medium rare after I learned about advanced glycation end product

If meat is all you eat your diet gotta be very pricey seeing that meat is not cheap

Paprika (crushed garlic) has also been found to contain Allithiamines which I believe will prevent glycation in the body just like it's synthetic variant Benfotiamine.

Paprika is called bell peppers in English also. Garlic is something else.

Green peppers are not needed for the paprikás, get chicken, onion, sour cream and powdered sweet paprika tomato is optional and there is a sweet yellow paprika what we use if we add any. (not bell pepper)

Fruits and veggies have vitamins that counter act AGEs one of which is THIAMINE, or vitamin B1. Look into benfotiamine. Side note: B vitamins are heat sensitive. Also- gut bacteria produce B vitamins.

Hard boiled eggs over fried or scrambled wouldnt this mean if water boils at 212F than we are cooking eggs at 212F instead of 400F when frying still think you should could at 120 over extended period only if its “meat” of course

Both boiled and scrambled are lower in AGEs. Scrambling uses moisture in the eggs, and no part of the egg is against the pan very long. A fried egg though is much worse. And, yes, it is the temperature of the food, not the burner or other setting...to an extent. Radiative heat can do damage, say when they use a hot pizza oven or a factory produces food by employing very hot short cooking.

It's still low temp because you are using steam. Advantage is it cooks much faster as well which means less time for glycation creation.

@@johnc.8298 Are you sure it is low-temperature? Because under pressure water boils at a higher temperature and that's why things cook fast.

@@pratikpatra8096 Good call. I wasn't taking into account that boiling point rises as a function of pressure. I suspect there's a physics equation that can plot boiling point vs. pressure if it was to be graphed.

Its still low temp, it doesnt go above 130C while oil boils at around 180C and oven is usually 160-250C

A lot of teas have tannins which can prevent nutrient absorption like iron . So for people like me who get reflux simply drinking tea because they are iron deficient, it's not suitable for

All carbs such as starches easily convert into sugars beginning with salivary amylase in your mouth when you chew carbs.

@@lexlex44 Not everyone is at the same knowledge level. Some are new to this whole "nutrition" and food biochemistry topic. Allow some leeway in people's knowledge level. There was a time when none of us knew what a carb is.

You get some new challenges when it comes to get enough of some essential vitamins and minerals if you avoid meat. You can eat eggs instead of meat though as they are a complete protein source.

Meat was the main food source for over two million years prior to the agricultural revolution 10,000 years ago. Meat products are our "species appropriate diet". Paleolithic people only had access to fruit for about two weeks out of the year, and the plants they ate were only to tide them over until hunting was successful. The plants and fruits of that era was nothing similar to the plant food that has been developed during the last few thousand years. Our bodies haven't changed much since paleolithic times. Archeology has been very enlightening about our past. Especially bone scans of these ancient people which identified their high meat diets.
