So you just use regular jam ? I always thought the jam was firm in other cookies maybe that's the jam drying out a little?

I just use regular jam. So it doesn't firm up but I know what you're talking about. I've had store bought cookies with jam and it's more hard but I don't know what kind they are using. The cookies do become soft the next day because of the jam. If you don't want that then you shouldn't put jam on all the cookies you don't plan to eat that day, if that makes sense. 🙂

If you are making your jam at home consider adding a little bit of extra pectin to it, the jam recipe i have been using for my home made jam is joshua weissman's easy jam recipe, maybe you should try making your own jam, it might come out a little firmer with the added pectin.

Good question. According to what it says online, jam can be stored at room temperature once open. However, from my experience, the cookie itself gets softer over time with jam in the middle. So if that's okay with you then you can assemble all the cookies at once. I usually do that. Otherwise you could store the extra cookies themselves at room temperature in a sealed container and put jam in the middle of the leftover cookies the next day or right before you plan to eat the cookies. I usually assemble all the cookies and store them in the fridge then they keep longer but as I said the cookie does become softer. I hope that makes sense! 🙂

I wouldn't think so. If you'd prefer margarine you could probably substitute butter for margarine but the butter is also part of the flavor of the cookie.
