Sharing Dr Berg notes: Vegetables have numerous health benefits. They are packed with important vitamins and minerals and are high in fiber. Vegetables are also loaded with phytonutrients, which are hard to get from other types of foods. Phytonutrients have a range of incredible health benefits, from protecting against inflammation to fighting cancer. Raw vegetables grown on soil even contain probiotics, which are friendly bacteria. Organic vegetables have a higher diversity of friendly microbes than non-organic vegetables. But keep in mind that the more you cook a vegetable, the more you’ll lessen the probiotic effects. It’s important to note that not everyone can tolerate high amounts of vegetables. If you are immune compromised or have any inflammatory condition in the gut, you may have difficulty consuming vegetables. If you consume raw vegetables and you feel worse, you may do better on the carnivore diet for a while. However, you could also try fermented vegetables or cooked vegetables. When you cook vegetables, you destroy many of the vitamins and enzymes in them. Heat also kills the microbes in vegetables. However, if you lightly steam or sauté your vegetables, you won’t lose minerals or as many vitamins. Steaming or sautéing vegetables may actually enhance the phytonutrients-but the data on this is inconsistent. As far as raw vegetables vs. cooked vegetables, I believe it’s best to consume a good portion of your vegetables raw. But, certain vegetables should be cooked, like Brussels sprouts, broccoli, and cauliflower. The worst thing you can do as far as preserving the nutrient content in your vegetables is to fry them. You can still consume fried vegetables but don’t think you’re getting a lot of nutrients from them. Thank you Dr Berg!🐱👍🏿

My 75 yr old diabetic father trusting his doctors when they tell him to eat frequent small meals and that oatmeal is great for breakfast? He tries, he is not lazy, just too old to use technology well and when I bring him evidence, he doesn't believe it over what his doctors say. @@GGGirl55 Sorry for your tough times! It's just that carbs are cheap, easy and everywhere (i.e., the cost of a bagel or cheap processed food bar vs. a head of lettuce, an avocado, etc.). With a head of lettuce over $1.50 and an avocado at $0.69-75 each (in my area), then a $0.50 (or less) bagel or processed food bar, over time, is a cheap option...but not nutritious. Healthy is obviously better but certain food choices might not attainable for some households, especially with the inflation now.
@tiesh3041 Жыл бұрын
Excellent point too, which again I blame our gov for, has nothing to do with people being lazy. Corn and soy and grains are heavily subsidized by out gov, making these horrible foods so cheap. Imagine if they poured those subsidies into organic produce and free range eggs, grass fed beef and dairy. These would all be so much cheaper and our health so much better. It seems such an obvious fix, why are we still subsiding posion?? It is criminal to me and people like my dad keep suffering from the entire system. I am so sorry you are struggling as well. I wonder if there has been any research done on this. Japanese cuisine is mostly about boiling food without oil. Chinese food is about frying in oil. Both cultures do not eat so much raw vegetable on a daily basis. I am Japanese and I decided to do plant based diet and started eating lots of salad with raw vegetables. My dad who was 86 had to eat raw too because I cook for him. Turns out his prostate cancer PSA number which was creeping up went back down and improved so it surprised the doctor. (this happened within less than 2 months!! because the checkup was every 3 month) The ONLY change was his diet. I always cooked the vegetables before but my big question was whether serving the vegetables raw made the big difference. I believethere must be some nutrients we can take when we take them raw.

In the UK we have had quite a few instances of elderly people (mainly in care homes) getting sick and some dying from Listeria infections after consuming vegetables. I personally think this is due to vegetables and fruits not being washed properly before consumption in addition to weak immune systems. Not sure if similar occurs in the USA. Cucumbers for some reason seems to be one of the main culprits, but of course there are others. In the UK it is not normal to peel many vegetables and fruits prior to cooking/consumption (bananas and oranges being the obvious exceptions).

I grow veggies in soil with well developed microbiology. My wife and I eat our 6-10 cups of green, leafy veggies every day as a brunch. With hard boiled eggs and avocados, our salad is practically a full OMAD meal. We use a salad dressing made of Extra Virgin Olive Oil and Bragg's Apple Cider Vinegar, and salt, pepper, garlic powder, and onion powder; a basic Italian dressing. We do eat a heated soup with squash, veggies, and meats after work. It is sort of a stretched OMAD eaten within an eight hour window. The meat is not grass fed and finished (yet), but the eggs in the salad are pasture raised. I would love your opinion on this regime.
@busker153 Жыл бұрын
@NoMoreCookiesSorry "The meat is not grass fed and finished (yet)," indicates clearly that I have heard, and agree with, his teaching on this matter. This understanding was further clarified when I said, "but the eggs in the salad are pasture raised." So, you see, there was no question of the importance of grass fed and finished meats at all. There was a question; regarding his opinion of the basic diet I presented, with the clarifications regarding said grass fed and finished meats: "I would love your opinion on this regime." That was the only question proffered. If you would care to comment on that, your words would be much appreciated.

@NoMoreCookiesSorry Yes, he did, and I love eggs sunny side up, but that does not go as well in a salad. Too messy! LOL But, thank you for this comment. It was a good reminder of that fact. Again, thank you...sincerely.

Be careful about overloading on oxalates from raw spinach. Didn’t work out well for me. Check out Sally K Norton’s work on high oxalate foods.

Can you tell us what canning and freezing and drying does to different vegetables and fruits!

Thanks. Interesting. Good to know. So, canned veggies are not a very good choice then?

@@Drberg Thanks. ...and bummer since canned veggies don't take up any freezer space! I prefer some frozen veggies over some raw ones since they save prep time.
