A big part in the romanticising of knights was played by Thomas Malory, who wrote Le Morte D'Arthur, pretty much _the_ definitive compilation of Arthurian legend. Malory, who himself was a knight and wrote most of the book while imprisoned for something (he was imprisoned for various crimes multiple times, but it's possible that at the time of writing his book, he was a political prisoner after the Wars of the Roses). He was well familiar with his fellow knights, most of whom were little more than highwaymen, and deliberately wrote the legends as kind of an "chivalric ideal" - not what knights were, but what they should be.

Actually I think the Genghis Khan thing was mostly climate related, the Mongolians were mostly used to the cold climate of the Central Asian Stepps so the hot climate of India was very hard to fight in, I imagine this is also partly why they had such an easy time in Russia compared to every other invader in history.
