I too, grew up on sauerkraut and made it ourselves with cabbage we grew. My parents lived to 91 yrs. I still love sauerkraut, but always make sure the cabbage his not Green Iant as it comes now from China. But I make mine with all kinds of organic cabbage and radishes. I eat it everyday.

In indian cutlures ; veggies are fermented with loads of herbs and spices. We call those achaar. In our culture, depending on the season achars are made and consumed. From green chillies, garlic, ginger to raw mangoes, anything one can imagine. An Indian house have at least 4-5 types of achaar in their kitchen that's eaten in small quantity with meals.

I'm a German Hungarian want to try something really good? Try this. This is for one serving so adjust as necessary. Take half of a large onion and diced to small pieces. Saute in 3 to 4 table spoons of extra virgin olive oil. When onions become slightly soft, add a piece of smoked sausage that is sliced up saute until the onions and the sausage are slightly browned. Remove from Heat and add 1 1/2 cups of raw organic sauerkraut. Add 2 tbsp of bright red paprika, and 1 tsp of smoked paprika return to heat for just a few moments to stir ingredients together just a heated up don't leave it on for too long not more than a minute or two otherwise you kill the bacteria. Enjoy with a good piece of German rye bread!

I prefer kimchi over sauerkraut. It has much more flavor and a kick. It just tastes better to me. I used to have itchy skin problem grown up and a friend recommended I try it. My itchy skin problem went away and never came back.

as a Hungarian we ferment everything, but most common is the cucumber in the big 10l jars, all you need is dill, bread or potato, vinegar and salt and a few days of good hot summer days. That shit will cure your gut in no time, stuffed with vitamins as well and low on calories if you want to diet or loose weight.

I do a 1000 grams of cabbage and 20 grams salt, if cabbage isn't fresh it might not produce enough juice so do a cup of boiling water add like 5 gram salt to it and wait to cool down properly and add to sauerkraut it works well for me

I'm a Korean man. My mother is 90 years old and lives alone with no health issues. Although Kimchi is considered a superfood, my wife, son, and daughter do not like fermented Kimchi due to its sour taste. As a result, most teenagers and the younger generation do not eat Kimchi these days. I love to eat deeply fermented Kimchi made with cabbage, red pepper, and garlic. Another favorite of mine is Yeolmu-kimchi, or young summer radish kimchi. Although yeolmu (young summer radish) has a small and thin taproot that isn't very useful, its thick and abundant green leaves are commonly used throughout spring and summer to make yeolmu-kimchi. It has lots of juice, so I eat it as cold soup almost every day.
