Cheryl, if you have a stand mixer use that to beat the fudge. It is what I have done in the past when I have made fudge. Works a treat.

Do you mix on low speed for 5 minutes?

@@samhugh4965 Lowest speed using a paddle for 5 minutes should get you there, but just keep an eye on it and pull it out when it looks done, you might not need all that time. You don't want to work too much air into it or it comes out too soft and crumbly

😄 Just make sure it gets up to temperature, the higher the temperature it reaches whilst boiling, the harder it will set 😘

It might help to switch out 2/3 of the brown sugar with brown sugar Stevia substitute. The sweetened condensed milk has enough sweetness that you won’t be able to tell the difference. 😅

Cheryl... I've been a subscriber of yours for a few while but I can't remember ever commenting on any of your videos. So... hello! My name is Paul & I'm from East Kilbride, just down the road from yourself! I tend to watch most of your uploads, from your Aldi/Tesco shopping trips to your Meals of the Week & recipes. This is a great video & is perfect for me being a type-1 diabetic. The fudge isn't great for sugar levels but whisky (alcohol) counteracts it and brings sugar levels back to normal again! 😜😜😜😜 Every cloud has a silver lining and all that! Plus... you can't beat being a little bit tispy, eh? I need to give this a try. Thanks for the upload, Cheryl. ❤️xx

I hadn't realised that sweetened condensed milk is 50% sugar. I use it in a fruit cake and kept going on about no added sugar only to discover the truth.😄😲

@@TraceysCookingNAllotmentHi Tracey, yes Bailey’s also works, in fact ‘carnation’ have a website with numerous recipes for using their condensed milk, many different flavours of fudge recipes on there if you’re interested. I always make a few batches of Bailey’s Fudge to box up & gift at Christmas time. Good luck & enjoy. 👍😋

My local spa sells the miniature bottles similar to what Cheryl used so il do whisky baileys and rum with raisen. Let's hope it turns out 🤣🤣

@ You’re most welcome Tracey, your gift hampers sound lovely, such thoughtful gifts. Hopefully you’ll find plenty of flavour suggestions on the website, & if you follow the instructions it should turn out well. My advice is to have all ingredients weighed out & prepared before starting & remember to line out your tin. Also a wee helpful tip is to keep your knife in a deep jug of hot water, before cutting up & wipe off the blade after each cut & back in the water before continuing with the next cut, it gives a nice clean finish to the finished fudge. Good luck 🍀 & remember to make a wee batch for the chef of the house to enjoy!😉😊

Isn't this similar to what you all call Scottish Tablet? minus the whiskey....my fudge,carmel,peanut butter fudge are all made this same way....a lot of stirring and beating...I make them often...

I made this for a party yesterday. Texture is fantastic, sweetness is at the right level, but I foolishly made it with bourbon. The flavor profile is too similar to the fudge, and the whiskey got lost. Lesson learned - next batch will be properly made with Scotch whisky.

Looks like they have the new labels on the milk over there now, too. I do NOT care for this new design as it looks very crude. It strips away a layer of visual identity, with the new label being very generic. Anyway, this fudge itself looks terrific! Fudge, it's not just chocolate flavour anymore!
