I am 78 years old. Was taught to can by my mother. We pressure canned our okra by this method. Always fried up deliciously.

My beans are still coming in so im gonna try this. We LOVE the tatets I dry canned this year. I'm 64 yrs old snd was helping Granny and Mom as long as I can remember. Thanks for the tips

I just made some this way and they were amazing.. This method has been used for generations and they do taste just liked freshed streamed beans..They hold their firmness and texture.. My hubby and daughter said they prefer them this way..Did up a couple pints of baby potatoes the same method and they also cane out amazing and great for potato salad . Happy Rebel Canning !!

I have canned almost all my life some of my first punched pints were $1.99 a box ! Crazy !and have never heard of this and really want to try them. Some add a pat of butter have you tried this at all. I’m glad you did this video. Thanks for you awesome video. This is very helpful to me. Happy canning .💕

I've added butter to my dry canned potatoes, but not beans yet. But however I have added potatoes, onions, bacon, Polish sausage. All are very good as well

Wow! I am so impressed! Been watching Ruth Ann Zimmermans channel and just this summer dry canned my potatoes, carrots and squash! One of the potatoes didnt seal (why???) So we had them fried for supper. They were fantastic! I need to pick my green beans today as its gonna get cold this weekend while we are out of town. I'm gonna try your method! Especially with the whole beans as I like Chinese stir fried green beans. I wonder if I can throw in some garlic and make them already have the Chinese garlic flavor????

Oh my gosh, I can't wait to try this with peas! I don't care for canned or frozen peas so this might be the method I like. Am a new subscriber and can't wait to try potatoes from the garden. This is awesome, thank for showing your method.

I haven't tried peas, I haven't grown any yet... as a suggestion, try half the way you usually can them and half another way. The beans are great like this, as well as potatoes, carrots, combos of those...

I make a mixture for soup with potatoes, carrots and onions. I have done carrots squash... Potatoes with green beans and meats.... Thank you for the kind words

… I think the terminology confuses people … the more accurate description would be “dry packing “ … rather than dry canning …

I'm going to be canning some gbeans today. I'm going to do half of what I have dry. The half with water. I can't help but wonder if the ones canned with water, would preserve them longer. Your thoughts would be appreciated. I'm still new to canning. I've canned carrots and gbeans this way once and they both turned out great. But again, I wonder if the water ones would last longer-term longer🤔😊

Did you fry can crook neck squash? I have been wondering if those will work like this. I feel like it may solve the mushy problem

I did acorn squash... they only lasted about a year tho.... maybe only add part of the water... you can always try a jar or two as a test... use one fairly soon and keep one or two to test later..

I don't add any water. I put the beans in right after I wash them. When totally processed I was totally surprised how much water was in them. They, to me, taste like they are roasted in the oven. Or leather britches/shuck beans...

@@dreamstorealityhomestead4647 I'll be looking for that video! I tried 2 pint jars of apples cut up for pie with a bit of lemon juice. They still look good after a week. But I want to let them sit for a year to see what they're like. I want to try peaches as well this week. The reason I want to do this with fruit is because me and my children have a problem digesting any processed sugars. I've tried canning apples with just water and while they hold up fine, they don't have much taste or sweetness left. It seems like it migrates into the water and leaves both the water and apples tasting very very unexciting.

After the dry canning process do you cook them in water or just heat them up.

Wait... I'm confused about the amount of water you should add to dry packed green beans. Because I always added water up to the upper shoulder of the jar. How much water are you adding?

I didn't add any water. Only what was on the beans when I washed them.

The pressure canning process with the added salt is all I use. I have some that are two years old and they are still great when I open and use them.

In mine there isn't an option for canning. I have seen several people post on social media that some of the newer big ones have that option. You would have to read your owners manual and see what it says....

I don't see a follow up video on these green beans since you mentioned this was the very first time you have done this and did it for a video. When will you come out with the follow up video on these particular canned green beans so we can see the results that these were done four months ago today as I write this.... just curious if they still look the same and safe to eat. Would like to see the results before I get brave and try this. Food is too expensive and I rather find out from your follow up video than to waste food if anything went wrong. Hopefully yours is just fine but would like to see the follow up to be sure. Looking forward to it very soon.

I have a video on my disk but haven't got to it with editing as of yet. The beans are great. I canned every one of my jars this way this past summer. The flavor is similar to a baked or roasted green bean.

I do love the flavor of roasted green beans and now I definitely want to try this and I think I will and will let you know if it works out for me. I'll make sure to follow your instructions to the T without any changes so that I make sure it works out the same way. But my pressure canner is an All American... do you think my pressure canner will make any difference in how they will turn out??

@@StayGold711 The brand of pressure canner should not change the flavors. I would suggest when canning them, can half of the batch the regular way you can and the other half this way and see what you prefer before you can an entire batch....

I dry canned the beans and they are awesome but I have a high fail rate with most not sealing . What am I doing wrong?

It could be the lids, they are not made like they were a few years ago. You could be tightening them too little or too much. I have had lid fails too but also on traditionally canned ones. My rate is no more than anything else I can.. You could have missed something on the rim when you were wiping them..

Not sure if I would try this but it was interesting watching your video. To be honest I don't like pressure canning green beans I usually use a pickling brine and water bath can them using 3 and half cups water 3 and a half cups vinegar 2 cups sugar, 2 cinnamon sticks, 2 Tablespoon pickling spice and one and a half teaspoons canning salt and boil the brine 15 minutes, pour hot brine over raw beans using quarts and pints. Process in rolling boil water canner quarts 20 minutes and pints 10 minutes. I usually never cut them up I just stick them in the jars raw, washed, cleaned and whole. I do see you pressure canned them and I worry about possibility of jars being under pressure without liquid and possibly breaking inside the canner. But it seems to work for you. Nice video though.

My family doesn't like anything pickled except the jars of pickles that comes from the grocery store. That flavor combo sounds amazing tho!!

@@dreamstorealityhomestead4647 they turn out really good and have a very light pickled flavor they dont taste at all like pickles in the jar like store bought stuff. They come out crunchy and have more of a very light cinnamom taste with a tiny bit of heat at the end from the red chili pepper and black peppercorns in the Ball brand pickling spice mix...and you can still saute them with garlic and oil and eat them any way you like just drain them and rinse them off in a strainer I've done that too. But this idea of dry canning, it's starting to grow on me and I'm actually thinking to try this after all as soon as I find another bargain at Aldis on green beans. I'm gonna give it a shot because this video had me come back several times and I watched a few times so far. So I'm getting more curious to try this for sure. Still hope to see a follow up video soon of how yours taste and if they still hold together. Let me know how they worked out.

I personally have only pressure canned but have read that some people have successfully water bath canned them. They processed for 3 hours.

@@Taking_Back_Thyme 40 years ago when I started canning that is what I did with beans and corn. Three hours each load, took forever! Now I pressure can and so much faster and also safer from what I read. But no, they don’t get mushy. They taste about the same as pressure canned.

I was not impressed with green beans dry canned. I didn't see a huge difference like I did with carrots and potatoes, plus the jars were not full. Won't do them again...or squash!!
