my biggest concern is in problem 2, where Player B would be goaltending if he blocked the shot

Haha, yes, you could prove that the y velocity is negative at that point- making it goaltending

For problem four, why are we not simply using pythagorean theorem to find the horizontal component of velocity for the string. If the block moves at 8.66, the string closest to the block also has velo of 8.66 in horizontal, therefore wouldn't its total velo be more than 8? Not seeing how the given solution is possible.

He didnt subtract i from j, the - is vector's direction

Because he was traveling in a straight line. You only have normal acceleration when it’s traveling around a curve.
