A great way to store your herb butter for longer is to freeze it. Once you've mixed the butter, spread it along the edge of a parchment paper and roll to a tight sausage. Put it in the fridge until it's hard enough that you can cut it into slices (don't separate the slices). Roll it back up in it's sausage shape and put the whole thing in the freezer. As you have already cut it you can then just take out as much as you need and leave the rest of the butter in the freezer for another time!

I see that you have Home Depot buckets. I used to buy those too until I realized my local restaurant throws out food grade white buckets! Now, I ask them to let me know when they have buckets and I pick them up. They are great and durable. I use them and feel some pride that I'm keeping them out of the dump. Hope this helps.

I worked in a restaurant and the manager let us have the food grade buckets with the sealable lids. I would buy cheap ground coffee and pour a cup of the dry coffee in the bucket, seal with the lid and let it sit for a few days. That would get rid of the pickle smell. We could then use the buckets to store dried beans and other bulk food. Now they sell special lids on Amazon. A snap on rim and screw top makes for really easy access.

I am Australian and I am in absolute awe of how beautiful Alaska is and the fishing! Your garden, preserves, cooking, keeping chickens and bees are great too. My dream is to set up aquaponics to grow herbs, berries, tomatoes and harvest silver and golden perch and yabbies (small freshwater crayfish that taste sweeter than prawns or lobster). Can't wait for your next video 😊

Absolutely thrilled to see video from you two!! Have you considered making a chimichurri sauce with all your herbs? It s a delicious Argentinian condiment and easy to make. It goes well on meats and as a dipping sauce for breads. Vinegar, herbs, salt, and spices are the basis of it

We've been freezing our pesto in ice cube trays. Once frozen we pop them out, bag them and back to the freezer. Each cube is a good serving or the perfect size for adding to sauces.

That's a great idea! I hope I can get enough basil to make pesto. I live in the total opposite environment. In the tropics, right on the beach. The salt air and previous 4 hurricanes, Alma hit us head on, have left my plants a bit hagered but we're getting to add a few leaves to salads at least.

My son is a executive chef and he taught me to freeze my pesto in Ice tray. Drizzle a little olive oil on top of each in tray. Freeze for a few hours till solid. Once it frozen place in zip lock baggie. You take out just the cubes you need when cooking.

I just learned that radishes produce a ton of green bean-ish pods if you let them grow. They are so delicious sauteed in butter. Definitely my new favorite way to eat from the radish plant!

Two tips I learned from making ceviche: put the fish in a colander so when the fish sweats out the moisture, the fish does sit in the moisture. Two don't wash of the salt. A lot of salt will be flushed in the moisture removal process. Plus if you are washing the fish your adding moisture back in and defeating the work you just did.

This is my favorite time of year! Harvest and preserve!!! I have never had an opportunity to garden, being a city girl all of my life. I enjoy watching your channel, you remind me of my childhood, I grow up on a Portuguese style farm, In Rhode Island my grand parents put everything up we only ate from the farm, chesses rabbit beef eggs chicken goat chesses and cows milk raw , that was from the land from the sea wow clams fish of all kinds, fruit from the trees also

Yummy! To keep the pesto thicker, skip the rinse or after picking the leaves off the stems, put in a pillowcase dedicated to the kitchen. Go outside and spin it in the pillowcase over your head shaking it up a few times to rearrange the leaves to get more water out. Make Eric do it so you don't look goofy.

FINGERTIPS SORE from peeling hard boiled eggs? 😢 Try this: crack the fat end of the shell and get rid of the little pieces. Then turn the bowl of a common teaspoon over and slide it between the shell and the whites towards the small end of the egg. 2-3 times under the shell and you’re done; on to the next. You’ll be done in no time when doing large batches. Been watching since you started the channel...love all you do. 💕🌵

Y'all know I look forward to these videos every year, so, there's that. 🤣 But, I really do love seeing the garden and all your wonderful harvests and how you preserve the produce. It's so inspirational to me and I thoroughly appreciate them. Great haul once again as well! I made my first ever. dill pickles yesterday and got a jar chilled. I just tasted one thinking it won't be as good as it can be until next week, but I just had to try it. I am so stinkin' amazed! They are sooo good! And, because you guys are always messing with recipes I felt emboldened to mess with the one I could find that sounded the least complicated and I am so glad I did! So, thank you for your inspiration! And, yep, the cucumbers came from my own garden. Whoop!

Couple of suggestions for your pesto. Dry your basil and you will get a much chunkier pesto. Freeze in bags to take up less space. Love all your cooking videos. Well, actually all your videos. Thank you for taking the time to make them

I had some concerns when y'all moved to Alaska way off grid. Silly Simone! I was amazed at how much food you are able to grow. Not to mention all the foraging and incedible fishing you do. Sorry for so many consecutive comments, ish. So, with citrus I've learned through trial and error. Zest the citrus fruits, then add the zest to your brine, then juice them into the brine after. Discard the pith and pulp (the white parts of the fruit, as they contain the bitter flavor compounds) Especially with a fish with such a delicate flavor as our northern pike. You guys are always on point! Just some tips from a dude that learned the hard way.

Scandinavian here. We love our pickled fish. One variety is fried and then pickled over night. One of my favourites.

The egg deal with the 5gallon bucket and the rose petals jam sounds like some good recipes for your exotic cookbook. My mother in law is going to make plum jam and jelly tomorrow at the age of 92.5 years old she loves to make jams and jellies in the summer.

My mother makes quite a lot of jam and jelly. She uses mostly fruits, but sometimes she uses elderflowers. She does use a ration 1.2 :2 sugar and pectin to liquid (juice) for jelly (like the one you were making) and 1:2 sugar and pectin to liquid a.k.a. fruits. If filled up hot in sterilized jars like you did, you don't need to heat them up again, you can store them in a cool place (no fridge needed) for at least a year. After a year there is no problem with it getting mouldy or something like that, it just looses its flavour. (We have had some jars that were 7 years old. There was no problem with it, it just did taste like watery sugar and not like fruit ;)).

Loved every minute of your gleaning. Brought back fond memories of my childhood … we always had a large garden. As for the jam making, for some reason I remember my mom adding paraffin once she finished with the water bath… but that’s a vague memory…. For that was well over 60 years ago. I’ll be 75 in a couple of months. 😉Thanks for your excellent videos. Look forward to your adventures. Living vicariously through them. 💞

I think the paraffin was to seal the jars, as they could not reuse the lids, and did not have money to buy more lids.
