I love radish kimchi but as well as spring onion I also like to add chopped carrot. The combined crunchiness of the radish and carrot makes the perfect kimchi for me.

I’ve really enjoyed making all sorts of kimchi and researching it. While researching, I discovered there are so many variations and each family has their own way and secret ingredients are common. The sprite for this type of kimchi is really a nice touch! While you won’t notice it much once it ferments for a while, you’ll definitely be able to enjoy the additional flavour, sweetness and bit of bubbles from your first few batches. A tip on how large to cut this - yes, too thin and it’ll turn too mushy as it ages- but it’s a bit too thick the first few times you eat it so I figured out that if I cut about 1/4 of my radish thinly and the rest the size Aaron recommended and keep side by side- then I can use the thinner ones first and the thicker ones once they ferment more. I also figured out adding a small amount of leftover kimchi juice from the previous batch helps start the process and a secret ingredient also I learned is one of those tiny yogurt drinks adds an interesting flavour.

Every now and then, when I watch this, I feel like Aaron is sitting there, smile on his face, while Claire is eating and describing, with a look of pure adoration on his face. Because I adore her, and I'm not even married to her. I always made my kkakdugi fried rice like Claire said, radish, tossed with some rice - I will have to try this recipe, that looks absolutely luxurious.

Hello! It looks really tasty! We have fermented radish in China too, but we normally ferment it for at least 20 days, since old people said there are high volume of nitrite in Day5-8.

Haven't watched this video yet, just wanted to write it under a new video. I hardly ever subscribe to channels simply because most of them aren't worth it. But damn, the pure quality of the content you guys are making is insane. Thank you for this video!! For my second kimchi effort (the first was a success!) I doubled up on all of my ingredients except the cabbage b/c I thought I could just increase the radishes which I love in the recipe. But I got nervous about messing with a recipe that I got right the first time; and like a fool, forgot that the one big cabbage was the size needed for just ONE recipe (not a doubled recipe that could carry extra radishes). Can't wait to make this!!

You should do a banchan series showing the different varieties and how to make them. My favorite is a sweet chili raw squid which is also impossible to find anywhere except from a restaurant here in SoCal. Everyone else's are all so salty. I would also love to know how to make green onion salad and pickled raw onions/garlic.
