I agree. Ive only just started dabbling into Korean foods and I (luckily) have a Korean market about an hour away and several Asian markets about 45 minutes away. So I I love videos that show the ingredients closely and what substitute is appropriate.

I made this and just packed it in mason jars and it was yummy! I only ate about half the jar and somehow it got shuffled to the back of my fridge and forgotten about for 2 months. I was about to throw it away then smelled and tasted it and it was SO GOOD. The best kimchi I've ever had! My jar is almost gone now so I'm about to follow the same recipe and "forget" it in the fridge again haha

After watching a lot of these videos and actually doing some of the things (I'm falling behind), when I finish making something I want to call "Claire"... I think some day I'm going to do it in front of company and they will think I'm crazy. I'm enjoying this one, it's pretty funny and also easy to do. I don't think Napa cabbage is hard to find in Florida, maybe we grow it here? Also there is good access to basic Korean ingredients. So we can do these things!

Aaron, i have done this kimchi recipes so many times and I wanna thank you because it was just so easy to make according to your recipe! It’s true I avoided doing it like a plague for the past few years because it’s hard to find the exact ingredients and back then then I didn’t know those could be substituted! It was so delicious it never last more than 2 weeks in the fridge!

Adding the apple made a world of a difference. Thank you for the recipe! I used a bit less fish sauce and only blended half an onion. The other half of the onion I sliced and mixed with the cabbage. Soooo good!

I just made my first batch of cabbage kimchi. After first mixing, I tasted, and it was super spicy. I added an additional teaspoon of raw sugar. I packed it up, and overnight, it was magic. I'm about to try it with just cooked rice(making sushi later). I wish I could show you my kimchi. I'm so proud of it. Thank you, Aaron. You're the BEST!!

I started making fermented kimchi a few months and am now learning more and more recipes with it. Still getting the gripe of ratios of of ginger-garlic-fish sauce, I also add a dash of fermented shrimp paste for that umami bomb. We don't have a lot of choice on Korean ingredients in our little country, but I do my best. This video gave me some more ideas, so thank you!

And I just bought some kimchi two days ago. I’ve never had it before, so I’m glad this video came out, so I can save money and make it myself. Kimchi here in Seattle is a bit pricey. Head to the H-Mart in Federal Way or in Lynnwood, whichever is closer. They have a huge selection and also make their own in store. And if you like Korean food or are interested in learning, it is the place to go. They have a great produce section. And the meat counter has a great selection as well. When I lived closer by, the Lynnwood store was my standard grocery destination. When you go, don't neglect the food court. Korean style Chinese food is amazing, I'm pretty sure that restaurant is still at the Lynnwood location. But that's not the only thing to choose from. Go hungry, eat before you shop.

I'm lucky to have large Korean communities to the north and south of Seattle. I have two different H-Mart stores to choose from as well as quite a few more general Asian markets with a good variety of supplies. I could easily find a kimchi refrigerator if I got serious about making it. My big problem with buying kimchi is that I have a shellfish allergy and most commercial kimchi is made with shrimp paste. Since I like breathing, I don't eat that kind. I can find American brands of vegan kimchi, but they just aren't as good (I remember the halcyon days before my allergy developed). Having a good recipe will be a great relief. Try some kimchi in a grilled cheese sandwich, sometime. It's best with a Mexican cheese called queso Oaxaca, but mozzarella or Jack will work almost as well. So having a good recipe

The recipes you share make Korean food here in rural America not only possible, but extremely accessible. When I can't find an ingredient that you use I swap it out for something I DO have and keep right on cooking. I know what I am eating isn't "authentic", but it IS delicious and PACKED with veg! It’s a winter vegetable! You’re in summer over there right now so yes it will be scarce. Here in Australia it’s available all year around but in summer it’s $7 each. Right now it’s winter and it’s $3 each.

Just made some today using this recipe with some slight modifications. Coconut sugar for the white sugar . Also, l thought my head of cabbage from Waitrose was a tad small so, got a heart of sweet heart cabbage from Tesco and added to it.

@@lisahinton9682 Firstly, bought one head of cabbage when realised it wasn't enough and my local Tesco Express had no white cabbage. Secondly, l don't eat white sugar Lastly, if we do not 'mess' with prefect recipes, we will not have recipes like the white cabbage kimichi recipe created on the YT channel. Hope this helps ! 🙂

@@lucieann21 It's usually available year round in the UK too (we don't have the heat you have, so it's been possible to harvest year-round, slightly different varieties). The problem has been with harvesters, they move round Europe working, but lockdown has stopped this: some of our produce spoiled or dried out because we didn't have enough people working.

You know this really is my favorite cooking channel. You make everything sooooo accessible! The base recipe you provide is not bad, but you always provide easier alternatives! I hate when certain cooking shows cook off by using rare ingredients or difficult techniques...... Thanks again!

We have a rule whoever cooks does not have to do dishes! When we go out for dinner it is a win win neither of us us cook or do dishes!

Thank you Aaron! I live in rural New York. There aren't any Asian grocery stores around. I do have gochugaru, cabbage and Thai fish sauce so I will be trying this! 👍
