Here's the simple and tastiest eggplant recipe | air fryer eggplant recipe
Air Fryer Eggplant with Sour Cream and Fresh Vegetables
Ingredients:
2 eggplants
2 bell peppers
4 garlic gloves
Olive oil
Salt, black pepper, paprika
Sour cream
Fresh herbs: basil, dill
1. Wash and dry the eggplant and bell pepper
2. Cut the bell pepper and eggplant lengthwise into halves.
3. Score the flesh in a diamond pattern without cutting through the skin.
4. Season with salt, black pepper, and paprika for extra flavor.
5. Place the eggplant halves and bell peppers in the air fryer basket and cut side up.
6. Air fry at 390°F (200°C) for 20 minutes or until the eggplant is tender and golden brown. The exact time may vary based on the size of the eggplant and your specific air fryer model.
Prepare the Toppings:
7. While the eggplant is cooking, chop the cloves of garlic and herbs. Add olive oil and set aside.
8. Remove the eggplants and bell peppers from the air fryer and let it cool slightly.
9. Peel and chop the bell peppers. Add olive oil, salt and black pepper.
Assemble and Serve:
10. Top with sour cream.
Add the herbs and garlic mixture on top.
Garnish with fresh chopped bell pepper
Serve immediately as a delicious side dish or light main course.
