YES! Diabetes friendly for sure. I didn't modify anything and with in 3 month I was off all meds. @ pills and an injection. Cheated over the holidays because I was week and so new to this lifestyle. I questioned how much does it really matter? Well is does, and felt like crap and blood work showed it too. Glad to be back on my WFPB diet.

I love your channel. I'm almost 53 and never had any weight issues (was always on the petite side) or health problems - even before going vegan approximately 9 years ago. Weight problems that is. Strange as it might sound (to meat eaters that is - re: iron) I was anemic my whole life until I went vegan. Being a newspaper journalist/editor I used to run around a lot with a camera and I always ate only when hungry, but since 2019 until the beginning of 2022, I've gained a helluva lot of weight (25 kilograms to be exact). This happened mainly because I left the paper and sat on my behind writing. All of a sudden the oils and sugar etc stuck (also, getting older I suppose, but mainly because I sat and became inactive). So, 2022. I couldn't take it anymore. Never been on a diet and knew that was not an option so I just cut out all oil and sugar and started my vegetable garden and also started dancing everyday because that's something I love and it's not exercise 😉 Since my birthday on 17 March 2022 I have lost most of that weight. Still got 5kg to go but not stressing about that. And boy did I eat - the way you are cooking now - I followed a lot of McDougal's tips etc. and my daughter is fully raw so she convinced me to do at least one raw meal per day. Which I did. So, to all the over 50s women here - just do it. I never thought about calories or even tracked anything. I just cut out oil and sugar. That's it. Took me from end of March until July - the fat literally melted away 5kgs per month. Also ate monomeals and would eat one thing for days. I have yet to go into even peri-menopaus 🙄 but suppose that I am just a late bloomer 😆 so once that happens, and full blown menopause we will see... The above essay all boils down to one thing: Are you an over 50 woman not being able to lose weight? Just follow this channel and if you don't lose weight this way fly to 🌞 South Africa and spend a month in my house so I can keep an eye on you because there is no way that you won't shed those kilos! Again, thank you for this channel - I love it!

Never knew I was so weak til finding myself having (a lot) of weight to lose & "middle aged". Due to chronic pain it's pretty difficult to exercise, but all the extra weight isn't helping. I could watch you two all day!! Love your cooking shows.... I have always loved peasant cooking.... but since becoming disabled with a severe chronic pain condition, I have trouble doing lots of prep and cooking...but these types of meals are perfect for me. I could make 2 on a day when I can function reasonably well, and I'm all set for the week for dinner... I love instant potting things too, dump and go 😊. I use farro a lot for my grains, fonio and quinoa....these recipes you made today would be great on top of the grains. I LOVE eggplant and this is such an easier way to make it. Eggplant goes well with curry seasonings, like the Madras mild curry blend.... Thank you so much for helping me to make my life easier and healthy too. 🙏💕

I have found that by using the steam option on instant pot sometimes eliminates the burn warning. And be sure to use at least 3/4 cup water in the bottom first. I believe this (or another liquid in it’s place) is recommended by instant pot. These are simply what i have personally found helpful. Hope it helps someone else too 😊

Sue Wells. In the chat you said you don't care for the texture of lentils. I know what you mean. I got some French Green Lentils and I'm sold. They cook up quickly, and hold their shape, like beans. Hope that helps. My favorite now. I add 1/2 cup dry to 2 Cups dry of short grained brown rice, rinse with the rice and . So yummy, and not too much lentils all at once. Add water till 1/2 inch above the rice/lentil mix. 40 minutes is usually good, but I like to start and cook on low, for an hour. It makes it all fluffier. I cook the old way till all the liquids gone, so it's somewhat 'dry.' Let me know how you like it. Don't know any other way to avoid the texture of the lentils. You can respond here. I'm sure Dillon won't mind and I don't have any other social media. Have fun.

Potatos and eggplant can be so different because the eggplant is the fruit and the potato is the root. Potatos can grow a fruit that looks like a green tomato but they're poisonous due to too much solanine (which all nightshades have in varying quantities).
