I will definitely try the cashew/salsa blended sauce AND the mushroom/walnut "meat". That's a great tip. I eat tacos all the time and this will be a great addition to taco night.

Can't wait to try the recipes! And can't wait for my hydro salad greens to get going, am starved for greens. Hydro isn't so bad when grown in greenhouse with SUNLIGHT. Anyone can do it in food-grade tubs without lights or pumps through winter in the southern states where we get lots of sunshine.

Made the beef ones, which were delicious. The cashew-salsa was too thick for my wide Vitamix, I had to use an immersion blender instead. I think those small inverted smoothie blenders might work best. Started at 87 mg/dL and slowly peaked at 105, eating one with an almond flour tortilla and two butter lettuce ones, "Animal Style". Good example of not having to give up anything.

I laughed when you said "$30 tacos" because I've had a running joke with an old friend about the price of food, particularly cooking from scratch. You can go out and buy tacos for a few bucks in the Southwest, but if you make them at home they cost about $20, which seems insane. So when we describe shopping or costs about anything that seems excessive it's referred to as a "$20 taco." eg: "We thought a fresh coat of paint and new counter tops would refresh the kitchen on a budget, but that turned out to be a $20 taco!"

Made both of the variates today and they turned up pretty good, but the mushroom ‘taco meat’ was little mushy. I guess it’s because I used different kind of mushrooms. So next time I’ll try to chop mushrooms instead of mincing them in the processor, and then sauté them first with little onions and drain the liquid before adding ground walnuts and spices. It may improve the texture. Thanks for the great recipe and everything else that you do. I am a big fan of your work!

Heating garlic appears to reduce its allicin activity and anti-inflammatory properties, suggesting that eating raw garlic offers more benefits. If you have an avocado allergy but want similar options in mild flavor, texture, and high fiber, consider breadfruit!

Kinda lost me at Salsa I’ve never experienced those types of products that doesn’t feature sugar (or equivalent) or stabiliser or preservatives. Also $30 USD in Australia at the moment is $46.40 I’m not confident that from the organics store this recipe is achievable at that price.
