Is it just me or does anyone else get really excited that someone is talking about the enzymatic properties of food and how best to prepare it for optimal absorption and health benefits. For me this is next level content and I love it with all my heart. ❤

I've been following Levels since I participated in the beta testing for the CGM project. I can't say enough about the quality and reliability of the work being done at Levels. It's science based functional medicine/nutrition. I am loving these new videos, partly for the recipes, but mostly for the education I'm getting about the foods. I actually pause and take notes while watching these. I work in nutrition and I'm a National Board certified health and wellness coach and these videos are professional development for me. Please keep them coming. I'd even like to watch some videos from the Levels team that are 'straight up' functional nutrition, perhaps for the geekier of us creatures. Thank you, Dr. Casey.

First time I've ever heard of un-dutched cocoa powder. Our food system is slowly killing us. After watching Bryan Johnson's video comparing 10 dark chocolate bars, I was shocked to learn of the heavy metals in most chocolate and low polyphenol amounts...possibly because of the Dutch process. Ugh. There is so much to learn.

You need to check certain brands of monkfruit. Some will also include a sugar alcohol.

Can u check regarding oxidation of avocado and extravirgin olive oil? I hear that they actually oxidize at lower heat and smoke point has nothing to do with the oxidation point? I hear grassfed ghee, butter, or animal fat better

Just one thing, (with the greatest respect for your knowledge and sincere wish to help people be healthy): ..I am quite baffled that you still use a microwave and advice to heat up the coconut oil in it. From my understanding (according to research) microwave ovens are really bad for our health, and turn our food in to 'non-food' that our bodies can't use in the same way. I'm absolutely not an expert, but just sense the truth in this information and stopped using microwaves years ago. Since you are so science based and truth seeking, it would be really interesting if you could look in to this information. As you are all about health and have great influence on a lot of people, this seems important to check out. Would love to hear you speak about this. Again: Many thanks for your great work in the world and this inspiring channel!
