Ingredients:
1. Butternut squash, one
2. Butter, 3 tbsp
3. Nutmeg, freshly ground, one oinch
4. Vanilla, 1 vanilla bean or 1 tsp vanilla powder or extract
5. Ginger, 1/2 inch
6. Chicken stock, 4 cups
7. Orange juice, fresh, 4-6 oranges
8. Heavy Crean, 1/2 cup
9. Salt
10. Pepper
To begin, you'll need a fresh butternut squash. Peel the skin off and cut in medium size cubes to help cook evenly. Save the seeds, toast them and eat them as a snack and garnish your soup!
In a saucepan on medium heat, add butter and squash and sauté for few minutes. Add ginger and sauté. The ginger will add a beautiful aroma to the soup!
Then add vanilla, chicken or vegetable stock and let it simmer, preferably covered with a lid for about 10 minutes. Add freshly squeezed orange juice and simmer for 5-10 minutes. Add salt & pepper and freshly grated nutmeg, and heavy and mix. Simmer for 10 more minutes, add heavy cream and then blend for 2-3 minutes or more till you get a velvety smooth soup!
Serve the soup in elegant bowls for that extra touch of fine dining. Garnish each bowl with a drizzle of cream, a sprinkle of seeds, and mint. I added dehydrated tomatoes enhance the visual experience!.
