To make the squash easier to peel and cut, heat it in the microwave for about 5-8 minutes, depending on the size. So much easier to work with that way.

I made this today, and it is so good! As I was roasting the vegetables, a friend stopped by and said that the kitchen smelled really good. The only change I made was I added garlic to the roasting pan as I was roasting everything else. Will definitely make this again.

We do a similar family recipe like this. After it’s done cooking we add coconut milk. Rich and creamy with great flavour.

I boil my butternut squash and add sweetener and onions and spices. Delicious 😊

I am making this now. I added leeks, carrot & celery just because I had an abundance of them. Keeping mine vegan today. I may do a swirl of coconut milk at the end. We grew butternuts this year. Not on purpose, but used compost soil. Ended up with 4 different kinds of squash. Thanks for the recipe!

This is the best Butternut squash soup! I've made this recipe half a dozen times since you posted it. It's become our favorite soup recipe for all of our butternut squash. As I've shared our garden's bounty with family members I've shared this recipe with each squash.

Nice technique -- really like this. I sensed that i wanted mine to be a little creamier so I held off half of the broth while blending and added a pint of cream during the final cooking. I also had a half a Fresno and half a Serenno pepper that I added to the veggie roast. Also my squash was small so I added a couple of sweet potatoes to the roast as well. Turned out very good and keeps well for a 2nd day reheat. Thanks for the vid!

This recipe is so delicious! I added Chile cayenne powder when blending and it gave it the perfect kick for my tastebuds! Thank you for this recipe Dani! I will try your method as I'm sure roasting the squash gives it more flavor depth. I make a quick butternut squash soup by preparing the squash as you did, adding the squash cubes and chopped onion into a pot with chicken stock and simmering until the squash is tender. Cool to room temperature, puree with an immersion blender and add seasonings of my choice. Reheat and serve. This soup also freezes well. It is quick to do!

I make quite a bit of butternut squash soup. I see no need to go through all the work of peeling and cubing. You can just the squash cut in half and roast the two halves in the oven, then scrape out the contents.

I love this soup and this was a great vlog. This is almost identical to my recipe except I add nutmeg and/or turmeric and roast the butternut seeds and use them. Fanatic is a noun (person). Fanatical is an adjective. Cheers from Canader eh!

This is definitely in my fall recipe books. I would recommend try roasting the butternut squash with maple syrup to add sweetness and put brown sugar then roast the squash in the oven. I would honestly blend it with sum sweetened or unsweetened apple juice and blend that together for a nice purée.

@@CleanandDeliciousDani this is a copycat version of Panera bread butternut squash soup. This is the way I do it. If you can think anything fall related ingredients it will go well with the soup. And use canned candy yams for extra flavor.
