Hi guys
Today I made 'Brown Butter Chocolate Chip Cookies'.
It's an American cookie made by heating butter until it's browned, just like when making Financiers.
Because cookies are made with browned butter, the unique flavor of butter is amplified.
A delicious American cookie with a hint of butterscotch, maximizing the flavor of butter.
This is an easy recipe made by simply mixing all the ingredients.

▶Ingredients (about 10~11 9cm diameter cookies)
113 g unsalted butter
40 g Granulated sugar
110 g Dark brown sugar (I used dark muscovado, a type of unrefined sugar)
50 g Egg
3g Vanilla extract
150g Bread flour (Bread flour gives a chewy texture. If you substitute it with cake flour or All-purpose flour, the texture will change)
1g baking powder
3g Baking Soda
1g Salt
110g Dark chocolate (using dark chocolate chips or dark couverture chocolate)
1) Heat butter over medium heat to make brown butter (= burnt butter) and cool it to a warm level.
2) Add dark brown sugar, white sugar, and salt and mix lightly.
3) Add room temperature eggs and vanilla extract and mix lightly.
4) Sift flour, baking powder, and baking soda and mix lightly until no powder is visible.
5) Add dark chocolate and mix lightly.
6) Rest the dough in the refrigerator for 30 minutes to 1 hour.
7) Divide about 50g into rounds with a cookie scoop or your hand, and then lightly press the top.
8) Bake in a preheated oven at 180 degrees Celsius for 10 minutes. (Wizwell Enhance oven)
* Convection oven: Bake for 10 minutes at 170 degrees Celsius
* Storage: Cookies can be sealed and stored at room temperature for 4 to 5 days, frozen for about 3 weeks, and cookie dough can be stored in the freezer for 2 months. When storing cookie dough in the freezer, make it into a round shape. When baking, thaw slightly at room temperature before baking.
