All Mexican food can be made healthy ☺️ and a lot of ingredients can be substitute for a healthier alternative 😊 for example chilaquiles, instead of frying the chips can be made in the oven or air fry 😅

Looks fantastic and I imagine tastes just as good. I've made this a few times but can never get short rib here in new zealand, not to mention chuck costs an arm and a leg per pound weight. Also it is impossible to get the hominy corn here so I have to do my best with substitutions.

I’m tooting my own horn here, but I make a killer birria, and it’s very similar to yours. The only differences are that I marinate the meat in the sauce made with the chiles, spices and vinegar/sour orange, and I also use beer to cook the meat. Thank you for sharing, I’m going to try it next time if I don’t have time to marinate the beef overnight.

Love this! Claudia, to do with chicken breast and thigh meat, would there be any change to the cooking times? God bless you and your family!

Blessings your way!!!!!! You can most definitely do it with chicken and yesssss the only thing that would change is the cooking time, after removing the impurities from the chicken add the hominy and cook it together chicken cooks in 30 minutes so your pozole will be done sooner. Also before adding the hominy add the chokes to make sauce n just add it in same time ☺️
