I never knew about fondant potatoes until a few years ago. For some reason, they are not popular here in the States. I square mine for better surface area . . . If you are reading this and never made these or had them, do yourself a favor and do so. You won't be disappointed. Fresh herbs are a must.

Hi Joel, I remember as a 5 year old the best thing in the world was fried bread in beef dripping, that came out of an enamel bowl that had been used for goodness knows how many roasts, but when finished always pored back into that bowl. The flavor was incredible I found beef dripping just recently at a Riches store here in Newcastle. I haven’t seen it for years I almost went into a Minny moment from “The Help” about Crisco. Anyhow I was just imagining the flavor bomb of those potatoes with a well used chunks of dripping. I’m salivating thinking about it. Amazing always Joel. Give Kenji a hug for me. 👍😋👍 I do these quite regularly, it goes well with many dishes. Personally, I am adding the salt while cooking but not the pepper to prevent it from burning. Therefore, I add pepper only on the top side (once it's grilled), a little before taking the potatos out. It helps to preserve the taste of freshly grind pepper
