Your channel inspired me to talk to my 94 year old grandfather about what's food they grew and ate on their farm outside of Witchita Falls, Texas. He said his mom didn't really can anything. The only thing she would can was peaches for pies. And he said she didnt really can them with a vaccum. He also said that they ate a lot of rye bread and what my mom and I think was homemade yogurt. They didn't grown grains or potatoes for consumption, but would grow all of their own vegetables. My great great great grandfather owned a grocery store and occassionally would get in oranges and give one to my grandfather, which was his favorite. It's crazy knowing her grew up without electricity or running water.

Brussels sprouts and carrots are the best in it!

@@GamesintheAttic All the brassicas pickle pretty well. Not sure I'd quick pickle cabbage but sauerkraut and kimchee are both fermented pickles made with cabbage, at least partially. I like quick pickling cauliflower. I'm not sure there is any vegetable, or fruit, that cannot be pickled. Watermelon rinds make amazing pickles. If you have bad flashbacks to those awful neon red pickled beets from school you should give pickling your own a try. They are very good, I don't make them very often as roasted beets are still better IMO.
