I made these cookies and they were very wonderful, but on the second day I found that they lost their taste and became very soft, like cake. What is the reason for this to happen? I used to put them in a closed box like regular cookies.

I'm so glad you enjoyed them! They can soften after they are stored because of all the natural moisture in the almond flour. If you have an air fryer, you can pop them in there for about 2-3 minutes at 385 F and they will be crisp up on the outside again :)
