My girlfriend and I have gotten Hiyashi and Hayashi confused in the past, luckily both of your recipes were delicious and she didn't mind that I made Hayashi instead of Hiyashi. Made this one (the one she originally requested) last night, it was really good Thank you!

Can I also use chow mein noodles instead of ramen noodles for this recipe? I couldn't find ramen noodles at my local asian store and I don't want to use instand ramen, because I they usually cause me to get a sore stomach :(

Can you recommend a cookware set with removable handles like you use in your videos? They do not sell removable-handle cookware in the US for some reason (!!??!!) and they are incredibly difficult to find but I would very much like to get some. I saw a Japanese set online (T-Fal) but they were pretty expensive. Do you recommend any brand in particular?

Yes, I've done it. They're saltier and have a slightly dusty taste, but it works just fine. :) HOWEVER, you must cook the noodles for a shorter amount of time than the package says (keep checking them, for me it was about a minute and a half) otherwise they will get mushy.

After the water is boiling but before you add the instant ramen noodles, add a little bit of baking soda to the boiling water and then add the instant ramen noodles. It'll make the texture of the noodles more similar to the ramen noodles that she uses.
