Kitchen Princess Bamboo / Japanese Everyday Food

Today I want to share with you, Hiyoshi Chuka, cold summer noodles.
Hiyoshi means “cold”, Chuka means “Chinese “, so it literally means cold Chinese noodles.
But ovbiously, Japanese people invented the noodles taste Chinesy, just like Ramen noodles.
You can use any ingredients in your fridge!
●2 servings
2 bunches of Chinese noodles
1/2 cucumber
30g crab sticks
4 slices ham
・Simmered dried shiitake mushroom
3 dried shiitake mushroom
※soak in 1 cup of water to rehydrate
1/2 cup water (rehydrate)
1/2 tbs sugar
1/2 tbs soy sauce
・Steamed chicken tenderloin
4 chicken tenderloin
a pinch of salt
1 tbs sake
・Thin omelet
1 egg
a pinch of satl
1 ts vegetable oil
・sauce
4 tbs sugar
4 tbs Sake
1/2 cup (120ml) soy sauce
6 tbs rice vinegar ※any vinegar has no distinct flavor
4 tbs sesame oil
2 slices ginger
green part of long green onion

umai!!! One of the best meals I've ever eaten!!! I made some changes to the sauce.... I added some ginger, and separately I cooked the shiitake mushrooms with water and soy sauce. When the mushrooms were cooked, the sauce left in the pot I added to the sauce for the noodles, to add some umami. Thank you very much!!!

Where I live in the United States , Japanese restaurant usually just means sushi restaurant or hibachi restaurant. it is rare to find a Japanese restaurant that actually serves a variety of Japanese foods. We used to have one near me but it closed down several years ago. They actually served this dish and I loved it. I have missed it since they closed but now I can make it myself. Thank you!

Hi, Akino! Could you make a video on making your own furikake? What I see here in the US has some chemical additives that I would like to avoid. You do good work with your videos and I am glad to see your subscribe increasing as more people are interested in Japanese food!

This looks so refreshing! It’s about 33 degrees C here and I’m outside cooking on the smoker, but I wish I had something like a cold noodle dish to keep me from feeling so hot 😅 I’ll have to remember the tip about rinsing the noodles. Thanks again for another great recipe!

Kitchen Princess Bamboo: Japanese Everyday Food I made my first batch of hiyashi chuka today and it’s incredible! I’m not a big fan of sesame oil usually, but the sauce recipe is so delicious 😋 I ended up dressing some chicken breast with the leftover sauce and it made a great lunch. This is definitely a summer staple for me now - so refreshing and satisfying. Thank you again! 💕✨

When I lived in Japan I loved this dish. The problem was I also tried to ask for it in the restaurant in the winter. Sorry but it's only available in the summer. I couldn't understand this at first, until I lived in Japan for longer. THANKS.

I know i'm very late here but if anyone is reading these comments i'd be grateful if someone could tell me if it's good to use thin buckwheat noodles for this? They were on sale in the Japanese market and my husband and I kept buying them and i've already made Korean recipe chilled noodles and it was only me that liked them. Having trouble finding another good recipe: any tips?? Thanks in advance. I'm not kidding, I have almost 2kg to get through and my mum brought some more up. I can't donate any more i'm already getting dirty looks for all the kidney beans...
