I love apple pie so thanks for making it. The pumpkin pie is traditional, i also love it along with pecan pie. In my family, all three pies are served so we always have a fruit pie, a pumpkin pie or sweet potatoe pie and always a nut pie.

These look absolutely wonderful. I have tried several vegan or plant based recipes for pumpkin pie and they have been a flop. This looks like a winner!!! Cooking the filling to allow the extra liquid to evaporate is going to help the moisture issues I always seem to have. I have a family of 7 and we are pretty much a two pie family now that everyone is growing up and hungry...so these two will be perfect for us to do at the same time. One I'd like to try is a Dutch Apple Pie with a bit of sharp cheddar or Parmesan cheese mixed into the crumble for flavor (can use vegan cheese or nutritional yeast). One we used to make years ago -- apples, blueberries and yogurt (can use plant-based), with some granola as crumble on top
