It looks really good. For me stew is all about the vegetables. I use bell peppers, diced and cut up roma tomatoes, green beans and corn in mine. Then I thicken it with tomato paste. I also use a larger cut on some of my veggies ( onions, peppers, celery)

You can definitly add less broth. It cooks for a while so be sure there is enough liquid so it doesn't scortch on the bottom. The carrots are big so they will hold their shape while the meat cooks until it's tender.

How can you thicken the stew?

add a Tablespoon of cornstarch to a couple Tablespoons of water and mix until combine. Add it to your hot, cooked stew slowly while stirring. Keep stirring for about 2 min and it will thicken a little.

You can cook it for another 20-3- min if needed. The pre-browning before it is all combined helps break the meat down for sure. Continue to cook until your meat is fall-apart tender. Best wishes!
