Fruit Hot Cross Buns
1.5 cups warm water (or milk)
5 tablespoons brown sugar
3 teaspoons yeast
add the top three ingredients and let the yeast bloom until bubbly then add:
50g soft butter chunks
4.5 cups plain flour
5 tablespoons milk powder if using water
1 teaspoon salt
2 teaspoons mixed spice
1 teaspoon cinnamon
1 cup sultanas or raisins
1. Mix with a mixer or by hand, when the dough forms around the dough hook continue for another minute
2. Cover and leave to double in size roughly 45 mins to 1 hour
3. Roll the dough balls into a bun shape and leave to double in size again roughly about 15 to 20 minutes
Pipe crosses on top
Preheat oven to 180c. Bake 12 to 15 minutes.
Brush sugar syrup once they come out of oven.
Paste for crosses:
add 1/4 cup flour to enough water to form a paste. Pipe onto buns before putting in oven.
Sugar syrup: dissolve 3 tablespoons of white sugar in small amount of boiling water.
Chocolate Hot Cross Buns:
Omit sultanas and add 2 heaped tablespoons cocoa powder and 1 cup choc chips.
