Ingredients For the Crust:
1 1/2 cups graham cracker crumbs from 12 whole crackers*
6 Tbsp unsalted butter, melted
1/2 tsp cinnamon
For the Mini Cheesecakes:
16 oz cream cheese from two 8oz packages, softened
3 large eggs room temperature
14 oz sweetened condensed milk
What You Will Need:
24 standard cupcake liners and 24 count muffin tin
Whipped Cream and Topping Ingredients:
1 cup heavy cream chilled
1 Tbsp granulated sugar
1/2 tsp vanilla extract
1/4 tsp Cinnamon to garnish
1 cup caramel sauce

The first recipe I tried of yours was the baked doughnuts and though it didn’t work the first time a few years ago, I tried them last week and they came out absolutely PERFECT and I’m now subscribed!!! Hi I just made these this morning for our Thanksgiving dinner at my sister’s house and let me tell you they were amazing. I was always skeptical about making cheesecake because I was always afraid of not succeeding in making it. They were so perfect and sooo good. Everyone at first thought that I bought them and not homemade. Thanks again for making it so easy. I follow everything and didn’t change anything, and they were so good especially the caramel sauce.
