I will definitely add a glass 2dl after the flour and reduce the stock accordingly. If we go that route I think we should skip the vinegar, not sure.

That looks fantastic. I have no need for gravy this weekend so I'll stop just shy of the flour/broth steps and use the mushrooms for some pasta I'll be making. You did a variation of this before called brown gravy (?) Just perfect! Vigorous boil, then low heat, then high again is tricky but critical. Asian chefs always add the flour straight in, now I see the value of that method. I have always added stock first, extracted some and mixed with flour, but it's not as good. Thanks chef
