This is the most delicious pumpkin pie recipe I've tried! I've made other vegan pumpkin pies but this one is the real deal! There's no egg in this recipe and I substituted the milk and cream for vegan versions. And the pie dough is to die for! It's extra flaky and buttery tasting. I used vegan butter instead of butter and you would never know the difference!

To make the pie dough, you'll need:
150g or 1 1/4 Cups flour
1 g or 1/4 tsp sea salt (leave out if your butter is salted)
113 g or 1 stick vegan butter cut into 1/2 inch cubes
60 g or 1/4 Cup ice water
Par bake crust 15-17 minutes, then cool completely before filling.
To make the pumpkin pie filling:
60 g or 1/2 Cup flour
99 g or 1/2 Cup sugar
6 g or 2 tsp pumpkin pie spice
106 g or 1/2 Cup dark brown sugar
212 g or 1 Cup pumpkin puree
153 g or 3/4 Cup almond milk (or other plant milk, not oat milk)
230 g or 1 Cup vegan heavy whipping cream (or full fat coconut milk)
2 g or 1/2 tsp fine sea salt
7 g or 1 1/2 tsp vanilla extract
Blend all ingredients and pour into a cooled, parbaked pie crust. Bake at 375 F for about 30 minutes. The sides should be set, but the center still jiggly. Let cool to room temp, then refrigerate at least two hours before serving.
