Mary, I love you, but I find your videos too long, to wordy, so full of a bewildering array of variations. Chef John's videos on food wishes run between 10 and 15 minutes. He has the key! Your videos are like mine would be if I did them. You throw all of the information possible at the viewers. I would too! But I would make the videos too long as well. It might be better to just mention a few of the variations possible, and refer the viewer to the recipe to discover them on their own, over there.

@@safieht5299 True. But in my case, for example, I'm looking to replace some of my more horrible eating habits with healthier ones. Currently, I have a mild problem with cheap, store-bought, bleached white-flour cookies with processed white sugar and vegetable shortening interiors. Ouch. So I like the recipe for the dried fruit and nut crackers. I understand these little crackers to be much healthier for me than what I've been eating. I think this is why some of us really appreciate these recipes. I also sometimes go berzerk with the store-bought Cheez-It, so if I make the little cheese cracker recipe it will help me out a lot.

Hi Mary! 🏵 Here is my adapted recipe for sesame garlic crackers. It made about 50. 2 cups whole wheat flour 2 Tbsp Parmesan cheese 2 tsp garlic salt 1 Tbsp sesame seeds 1 Tbsp flax seeds 1 stick butter 1/2 cup whole milk Pink sea salt for sprinkling I used your method, with an 8" log. They are quite tasty! I am going to serve them with cheese and our customary Sunday evening green salad after church. Thank you so much!

Mary, I've been wanting to make these for a least a week. I was almost out of wheat berries until recently. I've tried several recipes over the years but they weren't what I was looking for. I made the cheese crackers with the mustard powder and my family loved them. All I had was all purpose flour and it took extra cream instead of less. It kept crumbling on me so my slices were a little thicker and took longer to bake, but they were wonderful. Thanks again, Mary!

These are basically very thin little pie crusts, so they are fragile unlike many commercial crackers. I may try cooking them an extra minute the next time. I’m also going to try using a portion of buckwheat flour and/or almond flour to reduce the gluten. They work for me because I don’t want to eat processed foods and all the poisons they contain AND they are so easy. Another winner, Mary. Thank you.

I just started to watch your channel. I love watching all you make. I use to belong to a natural food group which I loved. Even exchanged recipes. I use to make my own graham crackers. So much better in making for desserts like cheese cake. But moved and they do not have a group. Glad I learned a lot before, but family gone now so I do not cook as much. You can use a piece of untaxed dental floss too cut the crackers and it works for cheese slices too. Grandmother taught use all how too stretch a log of cheese out for the month.

These look so good. I just bought the regular club crackers at the store yesterday, one day to soon. Anyway, I'm going to make your crackers too. I have everything to make all three, even dried cranberries and pistachios. I will be having family for Christmas and we always have a cheese and cracker plate. These will be nice on the platter. Thank you for another great recipe and videos! I made the wheat crackers yesterday and I substituted 2 T of beetroot powder for the sugar (I am sugar free) and used soft avocado for half of the butter and they came out delicious! Next time I am going to use all avocado to lower the calories and have more avocado in my diet (I eat butter on other things like some veggies) I served them with blueberry goat cheese and oh they were to die for! Thank you! Next I will be trying the cheese ones....

Hi Joanne, Thank you so much for the kind words! Hmmm...that is a great question. I have not tried making these with oil of any kind. I would try starting with maybe 2 tablespoons of EVOO and see if the dough comes together like wet sand - as to what it looked like when I worked in the butter. Add more oil - a teaspoon at a time - until your dough has the right appearance. Keep me posted. Love, Mary

Are there any adjustments I should make? I'm always looking for new ways to use the discard. Additionally, I wanted to let you know there's an issue with the cracker recipe on your website. I use 1 cup sourdough discard, one cup flour, 1/4 cup soft butter, 1 tsp salt and mix together. I roll out the dough nice and thin, then cut it into whatever shapes, brush with olive oil, sprinkle with sea salt, rosemary or Parmesan, and bake at 375 for about 15 minutes or so.

I’m going to try Seeded or Herbed Cheese Crackers! How much grain to start with to make the 2c called for in the cracker recipe? I will use one or a combo of all 3 grains to make the flour: Soft (“pastry”) whole wheat Rye Barley I know fresh ground measures differently than stale preground flour. TY!

Mary, those look really good and delicious. I will try them soon. Could I add some rye and oat flour to the herb recipe? Cheese and dried fruit can e hard to find here in the Philippines but I will learn how to make cheese and dry the fruit we do have. Going to try making cottage cheese and pumpernickel pretzels soon - one of my favorite snacks...

long time watcher, first time commenting. anyways, can't wait to make these crackers. I have a wood cutting board with built in wire cutter for cutting cheese, I wonder if I could cut the dough with it, I might be able to make them thinner
