WOW - I love this. It is perfect for us and our family. Thank you. I follow you faithfully. For the past 5 years, I have studied nutrition and the effects of processed foods at length as I have been fighting cancer. I concur with everything you say. My cancer was late stage and the prognosis was very poor. Upon the diagnosis and after chemo and surgery, I switched to a whole new diet with organic foods, kefir, sourdough bread, whole grains, clean fruits and veggies, etc. I avoid processed foods, bad oils, genetically modified foods etc. It has now been 5 years and I am in remission. This is miraculous. I truly believe that my diet is helping. Keep up the good work. You inspire and help so many.

This was my first attempt at sprouting, dehydrating, and milling sprouted grain, not to mention making flaked cereal Everything went very well. I started with 3 cups of hard white wheat berries. When I reached the milling stage, 3 cups of unsprouted wheat berries (once sprouted and dehydrated) yielded 2 cups of flour after milling. I used a stand mixer grain mill attachment, set on the finest setting. Even on the fine setting, the flour is slightly more coarse than store-bought whole grain flour. Next, I had to improvise a bit on mixing the cereal dough. I cut your recipe in half, so I added 1 cup of store-bought whole wheat flour to the 2 cups of sprouted wheat flour. I did not have enough honey, so I added what I had on hand--a large pinch of brown sugar. Additionally, I only had 2% milk and half the yogurt needed. I compensated (guessing) by adding heavy whipping cream). Once mixed, the dough seemed to be the right hydration. Then, I elected to go with the longer, refrigerator, absorption stage, since I was a short on the yogurt. Finally, I made a real effort to roll the dough very thin. The results paid off in a wheat flakes cereal that tasted just terrific and with all the crunch you could want. Final notes: while process is quite an endeavor, next time I am going to scale everything up and plan on baking in stages THANKS MARY!

Mary, week after week you amaze me. I'm always so excited when I see a video pop up for me to watch, my mornings with Mary. I've made granola before, but flaked cereal is something else, never in a my life time would I have thought of that. I just bought a box of raisin bran, what kind of flour/base would I do for that? Just the same recipe here, then add raisins. I don't know exactly how you come up with this stuff but I love it! I can't bear the day you can't think of something new, we will all be disappointed. Hopefully that day will never come. 😉 Your sister from another mother, Charlotte

@MarysNest 3 жыл бұрын
Hi Charlotte, great idea! Yes, you can make bran flakes. What you want to do is for every 2 cups of flour and one cup of bran. So if you make my whole recipe that would mean 4 cups of flour and 2 cups of bran. That will make bran flakes. Keep me posted on how it turns out. And thank you so much for all the kind words!Love, Mary ❤️🤗❤️

Great video! I enjoy learning about the science and chemistry of food - phylic acid and fermentation. I watched another video on KZbin that sourced studies which show that vinegars reduce the glycemic index of sugars and help to regulate insulin in healthy people so this process probably helps with that too, making this cereal much healthier than store bought. **Walking away to get out the rolled oats, stevia, and Greek yogurt.** Thank you Mary!😂

My kids were so happy this showed up in my KZbin feed. We don't eat a lot of cereal. It is so expensive and we finally found Azure which is a great place to get cheap gluten free flours. We are tried this with Masa Harina (kinda like corn flour) and a 1/4 cup coconut sugar. It was tasty. We also tried Buckwheat but it took a lot of modifications like 2 more cups and 1 cup of coconut. It came out very dense, a real arm workout. I think I'm going to have to continue to modify it, but it was tasty. Thanks Mary!

Hi Mary, this is so exciting! I gave up my favorite packaged wheat flakes many years ago because of preservatives. I turned to oatmeal but often miss the crunchy cereal which I enjoyed with cold milk and fruits. I use a local long-grain wheat variety and will certainly try making this. Thanks! Lajo

Yes, you can use almond milk to replace the full fat milk but add a bit of lemon juice or raw apple cider vinegar. As to the no knead breads - I have never made them with gluten free flour so I can't say. Love, Mary

Hi Mary, love this video! If I wanted to add bran would that be what is left when I sieve part of my ehole wheat flour to make my baked goods lighter? Thanks! God bless
@MarysNest
@MarysNest 3 жыл бұрын
Hi Melody, Yes - you are sifting out bran and germ and both can be added to the flour to make a "bran" cereal. For every two cups of whole grain flour, add 1 cups of what you have sifted out from other flour. So for this recipe if you use all 6 cups of flour, you would decrease the flour to 4 cups and add 2 cups of your siftings (bran and germ) and you will make a nice bran cereal. Love, Mary

Mary, I have learned an amazing volume of information about cooking and food science from you. Thank you for taking the time to learn the depths of each subject and share in calm and precise detail for your viewers. I really love doing things from scratch, but the family isn't too excited unless it is tasty and has the texture they are used to from the store. Have you figured out a substitute for store-bought Malto-Meal? In my research I found that it is made from some kind of sprouted and toasted barley (malted barley) and some wheat. How can I do this myself? I have my own mill, and my own dehydrator, and I use whole grains milled at home for bread. Perhaps I must learn to sprout and dehydrate barley. But, I need your expertise on that process, including the toasting and combining with wheat. Wouldn't it just be wonderful to be able to use the mill to crack and grind my own hot cereal mixes as well? Hope you have some ideas for me. God bless you! Your "neighbor," Merrilou, from East Texas.

Mary I recently found you and have so enjoyed your videos 😀 thank you. I have a question. I cannot find the FoodSaver handheld jar sealer you use for mason jars. Do you know if they have been discontinued? Are there other brands? I sesrched Food Saver website and seems the handheld is for containers or bags. Thank you.

Hi Keta, So happy you are enjoying the videos! Oh dear...that hand held foodsaver is tough to find right now. There was a real run on them during this virus. I know foodsaver made a new model and if you are not able to find that one either, I wonder if they are working on an even newer model. Also, if you buy the main foodsaver device (the large one), it has a jar sealer attached right to it. Love, Mary

Thank you Sweet Mary! I’m guessing this tastes a bit like Wheaties? Well an unsweetened version. It seems as if the cinnamon in this is extremely mild. As someone who has recently become pre-diabetic and who is missing cinnamon cereals I presume I can add considerably more cinnamon? Do you know how long the cereal might last if kept in an airtight container? Or should the cereal be kept in the fridge since it doesn’t have preservatives?
@MarysNest
@MarysNest 3 жыл бұрын
Great question. I definitely think you can add more cinnamon. This stays fresh in an airtight container for about 2 weeks or so but you can certainly put it in the fridge to extend its shelf life. Love, Mary

@lapismosi8065

Hello, I'm certainly not Mary, but I believe that 100 percent cacao or cocoa powder is fine, it's the amount of sugar needed to sweeten it to make it edible that is the problem. Perhaps use sucanat, date sugar, coconut sugar, or honey or molasses or Stevia. You would still have sugar calories but at least you would get some healthy vitamins and minerals along with the chocolate flavor😇💕

I make a biscuit/cookie thing and for flavoring I use a couple packets of Orange crush drink mix . That's why I'm here I want to make a cereal with the orange or 7up mix . Orange is best . I use it to make a oatmeal just a bowl of oatmeal ad a 1/2 packet of the orange crush mix then ad enough water to wet all the oatmeal plus more a wet loose mix refrigerate over night and you have a extremely sweet breakfast food. I have a mother with later stage dementia and getting her to eat enough is a challenge . Basically all she will eat is cheeseburgers and oatmeal or anything sweet. Picture a finicky 5 year old. She would gladly eat the oatmeal 3 time.s a day every day. But we went through a rough year or so oatmeal was sometimes difficult to find. I paid $9!for a tube of oatmeal. But I need a backup if oatmeal becomes difficult to find again.
