Soy curls expand when rehydrated. So before soaking them, I break them into 3/4 to 1 inch pieces so my recipe ends up being more bite-sized.

I use Trader Joe's sweet chili sauce. But any will do. You can find it in the Asian section of the grocery store. Try to make sure it does not contain oil.

You can absolutely use tempeh, but you should try it with the soy curls too. It's really tasty!

For me it takes away longer than 10 minutes for it to be hydrated enough and I've just used cold tap water. So maybe we need to use warm or hot water to soak it for only 10 minutes?

Ten minutes usually does it for my. I use water from the tap. So it's kind of in between.
