This is the bread my Dad's second wife made. We all loved it and I made it for years. They were both tragically killed in a horrific car accident in July of 2005. And I had lost the recipe. She has three daughters and oddly enough, none of them had it. I tried to do it from memory several times but something wasn't right. I'm 99% sure this is it. Thanks so much!

Ta daaaa! Did it! My bread was delicious and gorgeous (I divided the dough into 3 loaves). I had a neighbor give this starter to me in 1987 and I made bread until 2009 when I moved to another state and didn't feed my starter. I am now back in the saddle and the bread baking business! Thank you!

Thank you for this starter for sourdough. When I lived in Mississippi I was given a starter from a friend. At that time I made bread at least once a week. I tried to make a starter using flour but I didn't do something right. So i went back to the potato flakes but didn't have have the initial directions. You are a (MY) life saver! My sourdough starter of 40 years; died! I have been wanting to know how it was started & no one could tell me. I started naking bread since 1982 when I was given a cup of it. My friend who gave it to me got it from her mother, who got it from her mother and so on! So you can imagine 😊 how excited I was when I came across your video! I'm gonna start it today! By the way, I still have the starter in my refrigerator but I guess it's to weak to rise. It’s so easy and it makes such wonderful bread. Could replace homemade white bread. This is a very light sour tasting bread that is fluffy and sweeter than traditional sourdough. Give it a Go bro!

I’ve been making this bread for years I’ve tried other bread and it doesn’t hold a candle to potato flake bread I have to let my starter die occasionally because you will gain weight baking this bread! I use 1 cup warm water 1/2 cup sugar and 3 tbs potato flake 1 package of yeast makes 3 loaves I set it on counter for 3 days feed it 1/2 cup sugar 1 cup water and 3 tablespoons potato flake leave set another hour or so then place in the fridge for 3 days then I make bread using bread flour and 1 cup of my starter. I highly recommend bread flour it does make a difference trust me in a pinch I use all purpose flour but my bread doesn’t have the same consistency still good though. It’s great you are sharing this I think the whole world should be baking their own bread!

It’s ready after 5 days if you are just making it. Otherwise on a regular basis you feed it and then it’s ready to use in 6-8 hours afterwards.

I have been using a Potato Flake Starter that a friend gave me some time ago. (She lives in another town.) I usually keep two Starters, just in case something happens to one, then I have the other one. I had planned to make bread so I fed my starter. I decided to mix both starters together so both would be fresh. (That was a bad decision.) I had my two starter mix in the oven with the light on to keep it warm. A friend brought over a freshly made raw pizza. He didn't know I had my starter mix in the oven, so he came in and turned on the oven to 425 degrees!!!! Yep, he killed my two starters. So I am using your recipe to make a new starter. I am on day two. I will let you know how it goes.

Oh no! I had something similar happened two weeks ago. I had mixed up a batch of dough, I stuck it in the oven to rise. They both were in plastic bowls. My wife came along and turned the oven on to preheat the oven without checking to see if anything was in it. Yep,dripping plastic all in the oven!! Lol 😆

This starter will be watery, not thick like traditional sourdough starter. I usually stir once a day. I hope that helps.

Hi, thank you for the clip! I am new to this kind of starter making: I accidentally bought the fast rise yeast not the original. Today is day 3 that it is sitting out developing. I heard that I could feed it in the 3rd day and it will still rise bread. My question is: can the fast rising yeast be a substitute for the regular yeast to make the starter ?

It should still work. Maybe set it near a sunny window or place it in an oven with the light on. Just remember to check your oven before preheating to cook. Ask me how I know 🤣🤣

No you continue to use potato flake starter. This isn’t a traditional sourdough but a potato flake sourdough. It makes a soft and sweeter more white bread type of sourdough. It’s very yummy too!

I hate to hear that. I would think it would still work since the active dry yeast kicks it off then wild yeast take over. It may take a couple of feeding cycles to build up since you started with a lesser amount. I haven’t experimented with it to see if this works or not.

Thanks for making this video. A coworker gave me a starter many years ago. I made bread a few times with it and it was soooo good. Can’t wait for my starter to be ready to make some bread. QUESTION: when you store in refrigerator, do you use a plastic lid or still use the paper towel? I’m going to be out of town next month for 2 weeks and it won’t get fed.

I use a paper towel on mine and have for many years. If you use a plastic lid drill a few holes in or or leave it loose on top. I’ve gone a month without feeding mine but mine have been around a while. I think it should be fine though. Thanks for your comment! It does make awesome bread! I love it!

Quick question: I probably missed this detail in your video-once your starter is established and you feed it for baking, how long do you let it sit before using it? I used this starter and your bread recipe years ago but recently have had issues with my bread. I’m wondering is I’m letting the starter sit too long and maybe over proofing my bread? Help!

Once I feed it, I typically let it sit for 6-8 hours. This is for an already made starter that has gone through the 5 day process. This is how I work it: I get it out first thing in the am and feed it, then that evening I use it to mix up the bread for the first rise. I let that rise overnight, then punch it down in the AM and knead, then split and form into two loafs. Then place in bread pans for second rise. I let it rise a second time until it doubles, usually about 2-3 hours. Then bake it.

I would t recommend it. I would use plain. I’m not sure what the extra stuff would do to the yeast. It’s possible it would be fine but I’ve never tried it.

When making the starter for the first time, you will leave it out for 5 days. After the 5th day you will take a cup out then put the remaining starter up in the refrigerator. You can use that cup to make bread. It needs to stay refrigerated until your ready to make bread at which point you get it out, feed it, leave it sitting for 6 to 8 hours, then take out a cup to make bread with. You will feed it at least every 5 days. If you don’t want to make bread that often you can discard the cup or give it to a friend so they can have a starter. You can make it everyday if you wish by feeding it every day or stretch it out to every 5 days etc.

It should be very liquid. You will feed it 5 days after the person that gave it to you feed it. So if the just got the discard off of their starter yesterday, wait 5 days before feeding it. I hope that helps. Thanks.

@@thepickypainter9854 You can actually feed it everyday if you use it everyday. Make sure to take the 1 cup of starter off of it after 6-8 hours after you have fed it. You can make bread with that cup or you can give it to someone to use. There are also many recipes to use the discard with as well.

Hey Ronnie, this is the fifth day of using your recipe to make a new patato flake starter. I am the type, if I am going to do something, I over_do it,,,,lol. I ended up making four different jars of starters. I know, I only need one, but for two or three days I would think I had put my dough proofer too high, so I would make another starter, then I got confused and I couldn't remember if I had used yeast in both of them so I added yeast to the two I had and made a third jar of starter. I got them out and looked real closely and nothing was bubbling, so I made a fourth jar of starter,,,,,lol. Today was the big day, were my jars going to give birth or not??? I got the first jar out,,,,,OH BOY THAT JAR WAS BUBBLING. I got the second jar out,,,,I WAS THE FATHER OF TWINS, it was also bubbling. I got the third jar out and,,,,I WAS THE PROUD FATHER OF TRIPLETS, it was also bubbling. Then came the bad news, my fourth jar was not bubbling and looked like thin watered-down milk. I had to pour it down the sink. I was kind of sad, then I said,,,,"Hey proud father of triplets, you only need one of the starters to work and you have three wildly bubbling babies." So Ronnie you are their Godfather, thanks good buddy for all the help.

I use to make this starter a long time ago. It made the best bread. Now I can't get it to work.

All you have to do is half the recipe. Example: instead of 1 cup of starter, use 1/2 cup. Instead of 6 cups of flour, use 3 and do on. There are also apps you can download to expand or contract a recipe. I hope that helps!

I knew a lady that came from Louisiana. And she brought some potatoes back with her. And she led on like it could not be made, and she said it was a secret of how it was made. But I knew it was very simple to make I just didn't know all the opponents. But you, created the same kind of yeast that she said that could not be created or she let on that it could not be duplicated. Some people you just can't trust, to get the truth out of them.

Yes it is simple to make. I have never made it from real potatoes but I had one viewer try it and it worked for her. This is started with commercial yeast and then the wild yeast take over. I am sure it can be made without the commercial yeast but this speeds up the process. It makes the best bread too. So good. Thanks for your comment.

@@SouthernFoodJunkie the recipe that you're using is a little more complicated than the one I'm looking for, but I did find it on KZbin and it is made out of instant potato flakes. It takes one cup of warm water. Three tablespoons of sugar, 3 tbsp of instant potato flakes, and 2 1/4 teaspoons of Yeast. But you can find the recipe and how to feed the Yeast, to where you'll have it around to make bread every week. Just look on KZbin for sourdough bread made out of potato flakes. And you will find the potato flake Yeast recipe there, that is so much more simpler to use.
