EASY WEEKNIGHT DINNERS! 30 minute meals | One Pot Orzo, Beef Tostadas and Shrimp & Sausage!
Thanks for joining me for some quick and easy weeknight meals! These are all super fast and great to whip up after a long work day! My favorite is the Orzo dish by far, recipe is below!! See you in the next one!

Bell Pepper

toppings of choice
Air fry your sliced bell pepper and cook beef on the stove with taco seasoning, add beans, beef, cheese and peppers to the tostadas and bake until cheese is melty, add any toppings you like!
One-Pot Orzo (Sundried tomato & chicken!) Recipe by @SweatingAtNaptime on TikTok!
1 jar sundried tomatoes in oil
1 pound chicken breast or chicken tenders
1/2 yellow onion, diced
1.5 cups Orzo
2 Cups chicken broth
A few handfuls of fresh spinach
1/2 cup shredded parmesan
Seasonings: salt, pepper, garlic powder, italian seasoning, red pepper flakes
Heat oil from sundried tomato jar in a pot, add diced onion and cook for 3 minutes, add diced chicken, season and brown quickly (it doesnt need to cook all the way though yet), add orzo and toast for 2 minutes then add the sliced sundried tomatoes and chicken broth to the pot, cover and simmer on medium-low for 15 minutes, until orzo is cooked and liquid is gone- stirring occasionally. Add spinach and parmesan at the end and let it melt in for a few minutes, yum!
