Hi Renee...I'm living in the USA for over 40 yrs but still love my Trini dishes and mangoes are my all time favorite food, although I've never thought of making it in pancakes. Mango Fever! I can't wait to try all three. I can't believe that the Mango Sorbet uses only Mango and Lime, so that's considered a whole food, right? lol Plus I love the new intro and the updated theme song for Season 3. The sight of those mouth watering pancakes and the bass drum, guitar and steel pan had me in a trance from 7:42 to 7:53.

lollllll Yes I love the new intro too !!!Sorbet can also be made with any frozen fruit and honey as well if you dont have an ice cream machine but if you do have one a simple syrup is usually used. ahaha at "Trance"

This is perfect for mango season. People just let all the mangoes go to waste because they only eat them two ways ... Either chow or the mango itself.
