Dude Eater...this is intense!! The Holy Grail if i must say so out of my own admission. Could feel the heritage and culture speak through his ethos and work ethic. I grew up in San Antonio and was around my dad's barbeque pit so much I joke it smoked my soul. Now living in NC and the people are friendly, weathers nice but this video makes me incredibly homesick. I'm just going to say this, based on what I'm seeing here this man has met or surpassed the highest levels of BBQ tradition and technique set by Franklin and others. His knowledge has reached the same level of insane attention to detail. The direction of the logs, the type of wood.. the mix of green and dried sticks.. the rub, bark.. everything is done with a complete disregard for time/resources consumed, but meticulous, overwhelming attention is paid to the process and end result. The work of a master.

I met Aaron Franklin the first time I went to his restaurant. He told me I had to check out Valentina’s and that was the best bbq tip I’ve ever received. I’ve eaten bbq all over the county, but Valentina’s has a the one I’m obsessed with. So good and a must try.

Love the story, love his attitude and passion about his craft. You can see he loves cooking. Would love try the brisket egg and bean taco that looks awesome. Hopefully after this pandemic I will definitely make it a point to travel to valentina's BBQ
