Also, you’d probably argue that Ashkenazi Jews didn’t influence our love of smoked brisket….that’d probably make someone like you really uncomfortable. In short, it wasn’t Jim Bob and Truck Nuts in the yard with a Weber kettle.

I miss the BBQ Pitmaster show that was on TV many years ago. This lady reminds me of those excellent Pitmaster's and it is a joy to watch someone do it so good. I have been up all night many a times smoking meats & cooking for a family get together the next day. Doing this on Christmas eve is one of the best times for me. Working on our deck by the pond with all the lights with a great drink for the evening. Shalom

Kelli has mad knowledge in her craft. Its clear that her father spent plenty of time passing his craft down to his daughter. She def learned valuable skill frm her mother no doubt. Much like my own mother, she knows just how much ingedient is needed and when its done.

On a hunting trip passing through LaVaca we stopped here to eat on on whim... seriously the best bbq I have ever had. We plan to come back this year! Big Foodie and this place is on the top of my list. They had free beer and ice cream that day!

I have to say one thing that always gets me, “I’m a woman why wouldn’t I be able to be a pitmaster” the same people that say she can’t, would also be the same people that say women belong in the kitchen. If you have the passion for whatever you do don’t listen to anyone. The fact you have passion is all the drive you need to take you where you need and what to go!!

The number one spot in texas, Goldees BBQ, uses this technique as well. Jirby talks about it alot on his channel. Its a bit controversial but apparently works out great!

Anton is right. It's controversial. Some pitmasters believe it imparts a bitter smoke flavor while others obviously have no issue with it.

Eat here every chance I get! You can taste the unique flavors they use in everything they cook. My personal opinion but my favorite bbq place here in Texas! Their brisket literally melts in your mouth 🤤

As a believer myself, the people I have always been around dont care if your male or female. Dont sell yourself short sister you being a pitmaster can match up with all other pitmasters. To each his own as there are soooo many styles and flavors. Each adding their own unique twist. Yalls twist with a mexican flare is pure genius. Home based out of New Braunfels,born in Lubbock, and raised in Denton now living in Thailand, I can so relate to the big red thing. Our familys kick was homemade big red ice cream.Wish I was closer to find yall and try your culinary offerings. I pray one day. May God continue to bless the whole Nevarez family... Go sandcrabs! I think she meant that with yellow corn masa some folks add flour to have a better consistency. Some folks don’t know that flour is added to homemade sometimes.

As a south Texan I love seeing a little spotlight on our regional style of BBQ. Meaning more Mexican spice meets Texan techniques. Not sure about the dirty smoke, but I bet it’s still delicious! I wonder if they do any goat bbq too. I’ll definitely be stopping in to try that smoked tamale!! My husband would love this!
