The narrative is very informative - you can tell he does his research and knows how to deliver his exposition in a very engaging way of not only talking about the food but bringing better insight within the historical context and culture behind each dish. It's very personal, and it doesn't seem like he's only in it for the food but the sense of value it creates within the community and impact it has on spreading the diversity. Thank you Lucas :D

In Trinidad, doubles used to be traditionally found only for breakfast on weekends, then it extended to all days and now in 2018, you can get doubles on mornings, evenings into night and at some famous spots most of the day. It can be found all over the country, set up on the road side (street food) and food trucks where you get it hot on the spot (cooking while serving). Within recent years in a few locations you can get gourmet doubles - where you can get chicken or shrimp etc. added to your doubles. It's amazing! Usually you can get aloe pie (potato pie) wherever you get doubles and some places - more so the food trucks and selected stalls you can get other local delicacies like saheena, kachourie, polourie, baigani etc.....

Hey, good morning, as Lucas has said, Trinidad and Tobago truly a mixed nation. I am proud to say so because I am a trinbagoian, the short abbreviation for the two nations combine. We embrace anyone because of our mixed heritage. You will see an African but check his family out his mother or father, can be an East Indian. Our food background is huge. There will be conflicts but our people are truly spicy and loving. We also has the most churches in the world, out country takes God Almighty seriously, there are all different religious beliefs but each respects each others beliefs. Have great day everyone.

actually my first memory ever in life is having Doubles...in those days Trinidad kids actually walked themselves in small groups unsupervised to school from village to town center...and a doubles cost only 2 quarters (kid's price 😂) and if you had an odd quarter in your pocket, you simply ask for a half doubles aka "single" 😎

Good video. Just a few things to add that I haven't seen down below. Just be careful with ordering pepper on your doubles. Some doubles places have very hot pepper sauces while some are rather mild. Also I am surprised that no one showed you how Trinidadians eat doubles. Nothing was wrong with how you ate it and to be honest it doesn't really matter in the end, but to experience the real culture you should have ate it using one bara at a time to scoop the filling.
