I live in San Antonio and they have changed a lot of the profiles of these foods, and changed others. Barbacoa does not have avocado on it, only onions and cilantro. I guess they thought they needed to elevate TexMex for the NYC palette.

Onion and cilantro are standard garnishes for Mexican dishes especially tacos. You don't eat Barbados with corn tortillas? Avocado are pretty prevalent in Mexican cuisine.I'm surprise they didn't have salsas with any of the main dishes. Beside, this is TexMex cuisine which is already an amalgamation of traditional Mexican cuisine and American influences.

You should mention again that nothing goes to waste, that the hosts or crew eats all the food after, etc. Delaney used to say that. I mean we wouldn't really know if you actually do that but at least makes the viewers less bothered with the thought of food waste
