I can’t wait to see what you come up with this year! ❤🎉❤ Did you watch the potato video from HollerHomestead when they planted the long “eyes” shoots. He planted them just like sweet potato slips. When it was time to harvest I believe it was the same as with seed potatoes except the potatoes were deeper. If you haven’t watched it yet go take a look. You might want to try it too. I’m trying it this year. Can’t wait

Can I just say that I love how Becky doesn't use her baby for views!! When I saw the teething ring in the freezer it made me think of how careful she is about the baby and I super appreciate and admire that!

This is the first she has even mentioned her baby since she carried him around as an infant. I was afraid something might have happened to him and was afraid to speak of him. He must be over a year old now.

I'm single and live alone, don't have much pantry or freezer space but every winter (December to February) I do my own mini-food challenge by making 1 recipe (usually 2-4 portions) every week with ingredients languishing behind. It pushes me to be creative, clears out my pantry and freezer, saves me money and sets me up so I can defrost/clean the freezer and clean the pantry. Every year I find weird stuff I forgot I bought and every year I discover at least one new favourite recipe! Right now I have a box of king prawns defrosting in the fridge that I bought for a bbq that got cancelled last summer. I'll get two generous meals out of that this week and I am looking forward to it! OK, it's a bit harder to get excited about tinned tuna or canned artichokes, but playing with new recipes is always fun! 😊

Just a thought for your potatoes: I buy the large bags at Costco (best price) and I wash then bake them all. After they cool I slice them in half and put them in reusable plastic bags and put in the freezer. When I want any type of potato I just take as many halves as I need out to thaw and use them. It works good for me and my husband. This way I get the good price but I don’t waste any because it’s only the two of us and we just don’t use the large quantities fast enough anymore. ( Unless the kids and grandkids come over) Beautiful Pantry you have, thanks for sharing 😊

After potatoes being frozen, do they taste ok? Only reason I ask this is because I have bought frozen French fries, hash browns, steak fries and the texture and the taste I don’t like..

An idea for your potatoes: homemade pierogi! They're so easy to make, they just take some time. They also freeze beautifully. I make them up, boil them, melt some butter on them, and then freeze them. Just basic cheese and potato are simplest.

We're making some for dinner tonight. We like them boiled and topped with buttery sautéed onions. We like them for lunch lefovers.... we brown them in a little butter until slightly browned and crisp.

Becky just a suggestion for the carrots is to shred them in your food processor and freeze dry them. I find that everything I make I throw a ton if freeze dried carrots and zucchini in just to help get the veggies loaded up. I have not found anything I have put them in that you can taste. I put them in spaghetti, lasagna, shepherds pie meat, taco meat, homemade bbqs, if it has a sauce going on the meat carrots are going in, and no one is the wiser.

Hi Becky, if you watch Little village homestead she par cooks potatoes like diced potatoes, homemade fries,potato wedges. She par bakes them and flash freezes them for convenience potatoes with meals. That could use up your potatoes so they don’t go to waste.

So do I, half of the harvest fresh in my fridge and the rest goes into the freezer. Perfect for lazy days or when being sick. My freezermeals and other ready to go stuff has been a blessing the last two months while I have not been able to use my right hand due to an accident. Just throwing a bag of chopped potatoes from the freezer in the oven with some oil and spices.

Use potatoes and lard make homemade French fries or potato chips to serve with hamburger. You can also use hamburgers as crockpot Salisbury steak with mashed potatoes.

I decided to try it this year. I’m giving myself $25 a week for dairy and produce but we are a week in and I still haven’t had to shop. I’m not adding any other rules or goals because this is a season for me of setting baby steps and accomplishing those first. 😊

What I love most about Becky is that she doesn’t mess around, she just breezes through things so she can get out of the kitchen. Same way I do. I know my son would say that I have a floor area that I go back and forth quickly on, so stay out of that area or you will be run over. I always make extra of things that can be frozen, so I have fast meals in the future.

For your potatoes, you can cook them whole in the instant pot then grate them into hash browns. Just don’t super cook them so the potato is still firm. It makes the most perfect hash browns super quick. Just an idea if you’ve never tried it before to use your potatoes up!

Capers are also delicious in tartar sauce! I love to make what my grandma calls salmon croquettes (canned salmon, egg and flour formed into patties and pan fried) and I make homemade tartar sauce(mayo, whole grain mustard, worchestsire sauce, capers, dill, lemon juice and dill pickles)

My mom made those when we were kids, and I make them too. They are so good. Last winter we got snowed in and made it with canned tuna. It sounds gross, but it was pretty good too.

Just an idea as your freezer foods are used, replace the space with water bottle to freeze. It keeps the freezer from having to work harder and nothing is wasted, as you can thaw the water bottles as the freezer fills back up and use.

Have you tried making fried potato tacos or mashed potatoe tacos? During lent my mom used to make those on taco Tuesday. Also a tip I have for you is I worked in a grocery store overnight before and the produce guy used to lay a thick cloth over the potatoes every night, I started covering my potatoes and it helps with the sprouting . 🌱 I enjoy watching you vlogs they are educational and entertaining, I watch every episode. Bless you and you little family.

Carrot cake baked oatmeal, carrot salad with apples and a walnut vinigariette, Baked brie with honey and walnuts. A carrot souffle with candied walnuts. Just a few ideas I thought of while watching. If you have Green beans, you can use the cod or some tuna for a Nicoise-style salad to use up some of the capers. I can't wait to see what you come up with. I am not doing a pantry challenge because I don't have much of a pantry. But this inspires me to cook more!

First let me say as a 57 y/o woman how much you have taught me! I love your videos. I’m going to do my own version of the pantry challenge, as I have been re organizing my kitchen and small pantry. I just used the electric Presto canner I got as a Christmas present today for the first time canning salsa! Your tips are invaluable to me and I always looked forward to one of your videos.

I'm moving to a smaller apartment in my current building. So downsizing is now a must do. I've gone through my pantry and unfortunately most of the cans have expired. I've decided to be more intentional with what I'm going to stock up on. Being intentional has become my new mantra. Thanks for the inspiration!

I made this with some frozen blueberries in my freezer…it was so good! I put it over slices of pound cake, but it would be delicious over pancakes too…. Blueberry Sauce 1 cup blueberries 1/2 cup water 1/4 cup granulated sugar 1 tablespoon cornstarch mixed with 1 tablespoon water 1/4 teaspoon vanilla extract 1 teaspoon lemon juice Combine all ingredients and bring to a boil over medium-high heat. Reduce heat to low and simmer until thickened, abut 3-5 minutes.

Here in Scotland we all love red lentil soup made with a ham hock. Just lentils, leeks and carrots and then little pieces of the meat from the hock added at the end. So simple but so tasty! Love your videos Becky. Xx

My clean-out-the-fridge quiche is a hit in our home and is the perfect use for those shelf-stable cream boxes. It has pantry challenge written all over: pull a dough from the freezer and the filling can be made from whatever you need to clear from your fridge/freezer/pantry, plus a couple of eggs. Loved the video!

You could dice, and Blanch your potatoes, and freeze them and you wouldn’t have to buy frozen potatoes for your breakfast casserole and breakfast burritos. Do the same for French fries. Potato soup, American fries with gravy, mashed potatoes, potato bread, crockpot roast with potatoes and carrots…

This Fish Taco Sauce is amazing!! 1/2 cup plain yogurt 1/2 cup mayo 1/2 tsp lime juice 1 jalapeño 1 handful cilantro 1 tsp of minced onion 1/2 tsp cumin 1/2 tsp chili powder We bread r fish and pan warm r flour tortillas!!😊

My father used capers in a dish called "Königsberger Klopse". By the way, I'm from Germany. It's meatballs in a white sauce. We had it with potatoes and some sort of vegetable when I grew up and it was one of my favourite meals!

Becky, try freezing your potato chips and tortilla chips. Keeps them crisp and fresh indefinitely. Stock up when they are on sale. No more worries about expiration dates.

Start growing some spinach in your grow room. My husband grows spinach for us all winter long. It’s so nice to snip some fresh greens in the winter instead of a bag of baby spinach slime. 💙

I'm glad to see you're doing the challenge again this year. I'm participating as well. I set aside $20/wk for produce and coffee creamer. I just finished up my pantry and freezer inventory and it looks like I have enough to participate in the challenge for the next three months. My goal is to rotate my pantry. For each item I go through, I'll put it on my grocery list to track what I eat in the winter to help me plan for what to stock next year.

With the rice crispies, melt a bag of chocolate chips, add to that 1 cup nuts, 3/4 cup crispy cereal, and 1 tsp vanilla. Stir until well coated, and pour into square pan line with parchment. Refrigerate 30 minutes and cute into squares. You can store on the counter, these are so good and you can vary the nuts and type of chocolate chips according to your likes. Great video. You can also puree carrots and add them to pasta sauce and chili to add texture and sweetness.

Becky, that cow tongue with cappers is absolutely delicious! Just pressure cook it for 45mins or until tender. Peel and slice the meat. Then sauté with finely chopped onions, garlic, red pepper. Add cumin, paprika, salt and pepper to taste and the cappers. It is the most tender cut of meat!

Ham hocks make a great potato soup in the Instant Pot. Here's my recipe: make a base with the ham hocks, add 1 tsp of salt and ¼ tsp of ground pepper. Once the broth is done, pull out the hocks and pour onto a large container and let it cool to skim off the fat if desired. If you want to puck off the meat from the hocks,, do so when cold. Brown some chunks of ham and hock meat if you chose to do so, and 2 medium or 1 very large onion, chopped in butter using the sauté mode. Once the onions are translucent and the ham is browned add in the cooled broth and pressure cook for 15 minutes. Let the steam naturally release for 10 to 15 minutes or according to your IP's instructions. Then vent the IP so you can take the top off. Peel 4 to 6 large Russet potatoes and cut into 1" cubes. Add to broth and pressure cook according to the directions for your IP. Once the the IP has come down to the point of being able to take off the lid, give the soup a taste for seasonings. Add more salt and pepper if desired. To make a thick soup, mash some of the potatoes. For a Really thick soup add in potato flakes until you've reached your desired consistency. Just keep in mind that the soup thickens up once refrigerated. I often add in one washed and finely chopped leek to my soup when I'm cooking the onions. I also like to use Bob's Red Mill Potato Flakes to thicken the soup because they don't leave a chemical after taste the the name brands have. 🤷‍♀️ IDK if others can taste it, but I can. Becky, one thing I did as an experiment with hamburger patties was to make country fried steak patties. I thawed the patties then egged and breaded them. Then fry or bake in the oven! They turned out super tasty.

You can use your croutons to make stuffing. My mother-in-law used to make a fantastic stuffed roasted flank. You roll it so that when you slice it into serving sized "pinwheels", you will be slicing across the grain. I will sometimes use stuffing to top a casserole.

My fridge has a tendency to freeze produce too. It seems to be worse when outside Temps are volatile going up and down quickly. Keep all produce not touching the back fridge wall and keep produce as close to front door as possible. This seems to help a lot.

You can make mashed potato’s as normal and add 3oz cream cheese to it. Then freeze in dinner size portions. Great for shepherds pie or just heated and pour gravy over. I thaw in the fridge and then heat up. The extra liquid from freezing gets absorbed when they rest before serving. It’s been great having them to just pull out.

I keep a bin in my pantry of “must go” items that I want to use up. It helps keep those items out and in view.

You should try German Potato Salad in winter: it's often served warm and uses bacon, onions, and a vinegar-based dressing. Great on a cold day!

UK viewer here and potatoes are a stapel in our home. You could make your own oven baked fries with them they go great with a steak and corn, you could also bake a few potatoes whole and add your home canned beans with some cheese for a lunch we call it a jacket potato beans and cheese. You could also make roast potatoes with roast carrots and add some balsamic and honey in at the last 5/10mins of roasting they are so good. We love potatoes 😂 but honestly they are comfort food especially winter. I love watching all the fabulous things you grow/can/bake/cook and have tried a few recipes 😊 can't wait to see what the pantry challenge brings 😀

I use a Bissell Steam shot steamer to clean out my fridge and freezer. So easy! Steam and wipe away grime and sanitize.

We keep capers, as a condiment, in our refrigerator door, for easy smoked salmon dinners/appetizers/charcuterie boards. We use it often, here in the coastal PNW, but even so, we probably only use a couple of jars per year. I love to keep it on hand at all times, though. Now, I'm intrigued to try chicken piccata!

Get the hot soapy disinfectant water ready! For caked in spots, even a saturated paper towel left on the spot works great!

Becky, first of all I love your channel. I'm going to keep my carrots in the ground this fall and see how that works out. I live about an hour and a half south of you. I think it will work.

Excited for this one! You give me so much inspiration becky. I was wondering if you would ever share your must haves for baby or any books you loved? I love and so respect that you keep that side of your life private but feel like I could really trust your guidance on what you loved or didn’t love when it came to having babies! I am totally opposite of this comment. I understand to a point your privacy about your son but feel definitely cheated after going through a lot of info on your pre and post birth care choices such as breast care, etc. Up until a year birthday, I think a child physically changed so much that introducing him to us would not have posted any danger or him caring in the future. I am sure I will be lambasted by everyone, but I have the right to my opinion and don’t think I was ugly towards Becky at all. I am still watching her channel aren’t I?

The freezer drawers are able to be taken out. Take the top tray/drawer out first by angling it up as you come forward. Kind of the same for the bottom drawer. We learned when we had to replace the fan behind the freezer drawer.

You can make your own hashbrowns for hashbrown casserole with your potatoes. I never buy store bought hashbrowns but make my own. Also, for capers, in the summer I like to make a greek chicken salad with capers - so just another idea to use those up.

I'll be making some ginger, garlic, and tomato puree pucks. When I've seen people use them before, I assumed they were buying them from the store. From you, I know it's something one does for themselves at home. Thank you for that info!

Your posts have inspired me to pressure can for the first time, do freezer meals and stock my pantry! Thank you for all that you do! I am in Montana and last year I lost my entire garden to grasshoppers so I decided to buy from my local farmer to stock my shelves.

I’m Australian Becky, we make a one pan dish also with macaroni. Mince, Macaroni 1 packet of chow Mein. Brown the mince with garlic, salt and pepper. Add chow mein packet, 3 cups of water & 2 cups of pasta. Let simmer for 8 minutes till the pasta is cooked. Some like theirs with a dollop of sour cream on the top but we like ours as is with some crunchy bread with butter. 💜🙏🏼 God bless

Becky, have you ever made chicken tortilla soup? It has many ingredients your family likes. It would also be a great way to use those tortilla chips. I'd love to see your version of this soup.

Great idea! I literally have a pot of chicken tortilla soup on the stove. I like to use up veggies that I need to get rid of… both fresh and canned 😊

I've been avidly watching you for a month or two. I laugh because often you say things I say (such as "Die-hard cast iron and stainless fan"), I'm married to a drummer (band wife), and you are doing many of the things we've wanted to do. And although you are decades younger than me, I've learned several things from you. You've inspired us to do the pantry challenge for at least a month. We're starting it January 15th (my birthday). So glad you decided to join the challenge again! It's nice to get a perspective of the challenge from someone who has done it before but is in a new season and changing it up a bit. I know it's been fun in the past and you have the freedom to change or stop whenever needed if it starts to overwhelm you. You are wonderful and so is your channel!

Your frozen carrots can be used in a stew or soup. Put them in a bag and freeze them all, until you are ready to use. It's just like carrots in the store freezer section.

Make hot potato salad during the winter! Really good! And rather than use frozen potatoes in your breakfast casseroles, use fresh potatoes diced rather small.

Yes and she could chop and freeze up a bunch of potatoes so she can just grab a bag when she makes a breakfast casserole. Or soup or any other casserole that calls for veg or potatoes.

I thank you for your videos. It make me feel like I have a friend. I don’t have any friends nor family that check on me. I have two sisters and they’re both jealous of me because I own a house. They punish me by not talking to me at all. One sister haven’t visit me in the 10 years I have lived in my home and she just stay 30 minutes away. Thank you so much Becky! Pantry challenge meal - hamburger stew also known as hobo stew. Cook Ground beef, add whatever veggies you have. I used fresh, frozen or canned - green beans, onion, garlic, corn, potatoes, celery. It is good simply seasoned or making thickening or gravy, also good with tomatoes and tomatoes sauce. Great with corn bread! 😊

Hi Becky I am a bit late but I have an amazing pumpkin appetiser recipe we ate last Christmas. 16 Puff pastry squares 6x6 inches 4 cup pumpkin purée 4 cloves of roasted garlic 4 red onions 2 ts of thyme 1 cup cream cheese Peper salt and cayenne pepper to taste Caramelise the onions, then just mix all the ingredients together and put a dollop of pompkin mixture in the middle of each square. Put a tablespoon of caramelised onions on top of the puree. Then fold the the points inwards like a envelope. 15-20 minutes at 420 degrees. These are not exact measurements so feel free to play around with them. They are also good with some goat cheese and honey.

I usually do the pantry challenge for January and only purchase perishable items...unless I find a great buy. I do meal plan for January until Spring/Summer when we start fresh eating from the garden. You won't be disappointed if you make beef tongue tacos, my son and I make them every Christmas. Your frozen carrots will be fine in soup/stews.

You've inspired me to go through our freezers and put in one place the things to use first. We are doing a challenge, our only rule so far is to have a £30 per week (I'm British) shopping budget. So far so good. You could make a tarter sauce with your capers to go with your cod fillets you had.

Beef tongue in the slow cooker (or instant pot) makes for the best barbacoa tacos, that and cachetes (beef cheeks) are always the first to be used in our family 😄 Cant wait to see whats in store for the month! Good luck!!

Those "random" cuts would most likely can up beautifully. Raw pack, quarts 90, pints 75. Spices & any liquid or broth is optional. Having canned meat on the shelf is a game changer! I find myself using it all the time.

Love your videos. It warms my heart to see someone so young taking so much pride and putting so much effort into your home and family. Home is the most important part of our lives. The fact that you have also ceated such a lucrative and successful business by inspiring others to do the same is just beyond awesome. To use up the croutons you could crush them for a crunchy casserole topping or in place of bread crumbs in any recipe. They are especially tasty in meatloaf or as a crust for baked chicken. Praying for many blessings for you and your family as you continue on your journey.

Love your videos. You have encouraged me a lot to use my garden veggies throughout the year and make freezer meals. Also, consider a drop of oregano oil with a carrier oil in gelatin capsules (for ease of ingesting) when you and Josh are sick. This really helps to eradicate viruses and colds quickly.

I just learned last year that you can preserve carrots in water, even if the carrot is mushy you can put it in water and it will recover and be 100% good for eating, I have been keeping my carrots like this and didn't had to throw any away since

I've been making potato salad lately and have been putting capers in it! the capers being salty work really well with potatoes. Even better is serving it with some smoked salmon - yum! Another idea for potatoes in winter is potato and leek soup :)
