Our current go-to is sharing 1 $29.90 Hot Pastrami sandwich and 1 $4.95 hot dog with mustard and sauerkraut for a total of $35, or $17.50 each. Been to Katz's a couple of times now after multiple trips to NYC, and my go-to order is a half pastrami & half corned beef sandwich (on rye with mustard ofc). You get the best of both worlds - the salty corned beef cuts through the richness of the pastrami while the unctuous pastrami balances the saltiness of the corned beef. Highly recommend!

You can order the sandwiches with Italian bread and rolls. I usually order the pastrami here with the rye, but occasionally the corned beef Reuben, served on Italian bread. It holds together much better. Great summary of the differences between cuts of meat. I'm more of a pastrami fan myself. I think the main draw for corned beef is the higher fat content and salt.
