Okay so I am a self confessed lover of weird food, so when Iearnt about Tote Oma (Dead Grandma) which is a fried down German Blood Sausage.... I HAD TO HAVE IT! ohhhhhh man I have been missing out, this was GOOOOOD!

I think most regions in Germany have a traditional food that involves pigs blood. In Northern Germany this would be "Schwarzsauer", which is like a thick soup. You eat it with potatoes, pigs meat (traditionally paws) and semolina dumplings. In western Germany you have "Himmel und Erd", which combines apple sauce, potatoes and fried blood sausage in northern regions you would eat fried Grützwurst (something like black pudding in sausage form) with it. I am sure you could find even more traditional dishes like that in other German regions. I think that most stuff made from pigs blood usually looks disguting, but most of the time it tastes pretty good. "Schwarzsauer", I think, is something of an acquired taste, if you did not grow up with it, but I always liked it a lot, provided that you eat it really hot.

I need to try it prepared like this! Was thinking it looks like the filling of Aussie/kiwi mince pies even before you even mentioned it. I actually love the taste of Blutwurst (if I don't think about it too much)

It's one of the poor people food in the past which came to a special food in present time like Matjes Brötchen, Grünkohl mit Bregenwurst, Pfannenschlag, and a couple of other poor people foods. (... and also known in north-west Germany like Ostfriesland)

This may be a traditional Eastern German dish. However the English term "Blood Sausage" (Blutwurst) is not the same in all parts of Germany. The sausage what you have eaten looks to me like "Grützwurst" as we call it in Western Germany. It contains ground pork, pig's blood and buckwheat. Whereas "Blutwurst" (Flönz) contains ground pork and blood mixed with bacon and lard (white bacon).

In Niedersachsen nennt man es auch Verkehrsunfall, und kriegt es beim guten Metzger frisch zu kaufen. Einfach nach Hackgrütze oder Grützwurst fragen.

Hackgrütze ist es nicht, die sieht ganz anders aus. Grützwurst ist wie Pinkel. Tote Oma ist ähnlich wie Wurstebrot, nur nicht zum Schneiden.

Als Niedersachse habe ich bisher weder was von Verkehrsunfall noch von Toter Oma gehört oder gesehen.

Ich kenne Blutwurst aus der Pfanne aus Niedersachsen nur als "Losewurst" (Das galt dann auch für Leberwurst)- das was nachm zubereiten der Blutwurst übrig blieb, also zuwenig für Dose oder Darm, kam in die Pfanne. Dazu gabs häufig einfach nur Kartoffeln und kein Sauerkraut.

Tote Oma is really more an Ex-GDR thing, but Blutwurst is common allover in Germany. I live in the North and here a combination with heated Blutwurst in thick slices with a combination of apple and potato mash is something traditional. The name is also poetic - Himmel und Erde - heavens and earth (the appless growing high above 'heaven and the potatoes growing in the earth). BTW - huge consumers and fans of blood sausages are the French, they call it Boudin and have even an organization with several thousand members, which looks after the traditional production and elects the butcher which produces the best version each year!

when i was a kid we where down an the river playing and got a worse sun burn, my great grand mother gave us a milk can to buy some blood at the "Metzgerei". She fried the blood together with potatoes and onions, and made us eat that as "medicine". In an old book book there is written, that blood is to good to pour it away you can replace eggs with it, and blood has "körperverfügbares" iron, pottasium, vitamins, is low in fat und high in proteine.

Probier dich durch die lokalen Spezialitäten. Schnitzel und so'n Kram, ja, lecker. Im Winter mal Steckrübeneintopf, und viele Sachen, die hier genannt wurden. Sagt mehr über die deutsche, regionale Küche aus, als die bekannten Sachen. Und jetzt hab ich Hunger 🤤😉

I live in Palatinate, south west Germany. Blutwurst is quite common here. We even have local variety with small potato pieces already mixed in. Our local specialties are of course Saumagen ("pig stomach"), a kind of sausage, and Leverknepp, meat loaf dumplings flavored with liver.

You also get little Blutwürstchen and Leberwürstchen which you boil together with the Sauerkraut. You serve it with either mashed potatoes or boiled potatoes ("Salzkartoffeln"). Yum!

Here in the Ruhrgebiet it is knows as Panhas. It is not Blutwurst, it is Buchweizengrütze, buckwheat groats.

We have black and white pudding in Ireland. We eat it sliced, the white is mostly offal and cartilage and what have you and the black pudding is the blood. Its bloody delicious.

We have something similar here in Bavaria... at least where i live. Leberwurst (which i prefer) and Blutwurst also served with Sauerkraut and Potatoes... but we don't fry it.

Get some Oma's Roter, (Blutwurst in a jar), slice open a brotchen and spread some garlic and herb cream cheese on it, put on the Omas Roter and put it in the microwave for 15-20 seconds, or just until the brotchen is warm, squish it down a little. eat and repeat.

Dann musst du auch mal Labskaus probieren. Sieht auch aus wie schon mal gegessen, ist aber auch total lecker. Calenberger Pfannenschlag bekommt man bestimmt bei Schlachter Nachtwey.

Jacob, you have to try „Würzfleisch“ or „Steak au fort“ both of them are typical for east germany too. And if are ready for a positive culture-shock, you just have to order a „Hamburger“ ( HO-Style

In Franconia we eat that as well but we don't call it "tote Oma" and our Blutwurst as more bigger chunks in it. Aside from that it's basicly the same dish

In Cologe they call it "Himmel und Erde" (in Hochdeutsch) Heaven and Earth. Meat (Himmel) and Potato (Erde) You could buy the Blutwurst in most of the small (privat) butcher shops. Sauerkraut at some farmers oder Hofläden, Kartoffeln too. We have some good family butcher arround Hameln, most of them make Blutwurst and other "old" Wurstsorten. Sauerkraut we buy fresh from a farmer, Kartoffeln too. Living in a small village have a lot good options for fresh and good food. ☝🏻😍

Not "meat". "Applesauce". The Apple stand for the heaven, and the potatoes, which are also called "Erdäpfel" (earth apples) for the earth. This name for apples comes btw from French, where potatoes are called "pommes de terre" (apple of the earth). You can eat it with Blutwurst, since that it is the most traditional recipe, but you can also combine it for example with Leberkäs. The deciding factor of this dish is the (heavenly) combination of mashed potatoes with applesauce, not necessarily the Blutwurst.

Try local butcher for Blutwurst there is a grey looking one called Leberwurst( not the stuff you put on open sandwich) in other areas they are heated as sausages and then cut open and eaten with potato and sauerkraut but you can fry that up too.

Well if you like Bloodsausage you should try "Himmel un Ääd" from Cologne. Fried Flönz (Cologne's style of blood sausage) and optional fried liversausage slices under a bed of mashed potatoes with apple sauce topped with a good amount of (freshly) fried onions (not the American style but in long thin strips). My personal favourite dish after Graupensuppe

Welcome to Schleswig-Holstein and Hamburg with our very famous "Labskaus". Served with fried eggs and "Rollmops". Labskaus looks like sth that the cat threw up but is delicious. Im ländlichen Hessen hatte man die Tradition, dass beim Schlachteessen (also die Mahlzeit, die es für alle Helfer am Schlachttag gab) die Beigefreiten (die, die aus einem anderen Dorf ins Dorf eingeheiratet hatten) immer als erstes ein Stück Blutwurst essen mussten. Damit sie künftig von einem Blut mit dem Einheimischen waren. Noch heute gibt's dazu Sprüche. Du hast dich nach unserem Brauchtum also nun voll assimiliert und bist nun auch von einheimischem Geblüt. In Oberhessen gibt es etwas ähnliches wie Tote Oma. Man nennt das hier Sau-Honig, Blut-Honig oder Wurst-Honig (das Wort Honig kann man auch durch Madde, hessisch für Quark, ersetzen; andere Namen sind Fänsel/Fenzel oder Knalli/Knallee). Das wird etwas anders gemacht als Tote Oma. Ums einigermaßen authentisch hinzubekommen, nimmt man eine noch relativ frische gekochte aber nicht geräucherte frische Blutwurst mit Grieben (ohne Zunge), z.B. 300g. dazu 1/3 der Menge frische Leberwurst, also 100g 1/6 der Menge ganz frische Mettwurst, also 50g (oder gewürztes Hackfleisch) 1/3 kalte, geriebene Pellkartoffeln (am besten vom Vortag und natürlich gepellt, manche nehmen auch lieber Salzkartoffeln), also 100g und 2+mehr Schluck starken, kalten Kaffee Man erhitzt (nicht braten) das bei mittlerer Temperatur zusammen in der Pfanne und rührt, bis eine sämige Masse entsteht. Ist die Wurst ziemlich mager gewesen, dann gibt man noch etwas Griebenschmalz dazu und/oder noch mehr Kaffee (soll natürlich keine Suppe werden). Abschmecken kann man mit Pfeffer, Salz und Majoran. Das Gericht ist fertig zubereitet, wenn die Speckgrieben in der Pfanne zu knallen beginnen (am Ende deshalb die Temperatur etwas höher drehen). Inzwischen gibt es auch über Tante Google suchbare Landmetzgereien, die Sau-Honig in der Dose versenden. Es wird trotzdem immer schwerer das noch zu bekommen. Beim Schlachteessen isst man den Sau-Honig mit Pellkartoffeln und Kraut, die allermeisten essen ihn aber als kalt-warme Mahlzeit auf einem richtig guten Sauerteig-Roggenbrot. Es ist ein Spätherbst- und Winter-Essen, weil es sehr viel Fett enthält. Für den Sommer eher ungeeignet. Menschen, die Probleme mit der Galle haben oder zu Sodbrennen neigen, sollten besser darauf verzichten oder nach dem Essen einen Kräuterschnaps als Nachtisch nehmen.

In Schlewig-Holstein heißt es Grützwurst, und meist gegessen mit Bratkartoffeln und Apfelmus....und es ist ein traditionelles Winteressen.

My Mum used to make Blood and Liverwurst with potatoes and Sauerkraut in southern Germany. Heat the Bloodwurst and the Liverwurst with it's skin on in simmering water till heated throughout and serve it skin off with Sauerkraut and Potatoes. Deligious 👍

Hast du schon mal Knipp oder Labskaus probiert? Sehen auch nicht grade gut aus, schmecken aber köstlich! Und natürlich das beste aus Niedersachsen: der Grünkohl! Am besten Oldenburger Art, schön mit Pinkel, Kassler, Bauchspeck, Kochwurst und Mettenden.

In meiner Gegend heisst die Blutwurst Panhas und wird in Scheiben gebraten. Es ist ein altes, traditionelles Essen und meist nur frisch nach Schlachtung der Schweine erhältlich.

Es erinnert mich sehr stark an die Schlachtessen in hessischen Dörfern. Bestimmt ist das in Niedersachsen such so. Man nennt es da nicht tote Oma aber es wird da auch gegessen. Vll ist es etwas aus der Mode gekommen. Finde es auch ganz lecker !

In and around Berlin, Tote Oma includes cooked fresh Leberwurst as well as Blutwurst. It smells rather terrible, but tastes great. In Niedersachsen they should have Grützwurst, which is prepared with a different kind of sausage (more like a haggis, but made of pork). I'm originally from a place about 100km away from Hildesheim, where the equivalent is Wurstebrei. Once again, slightly different kind of sausage, but the same preparation method and a similarly disgusting smell.

4:40 Don't ask where to "get" dead grandma. just cook it yourself. The "real" black pudding, potatoes, and sauerkraut. It's all very easy! Tip. Use butter to fry the black pudding. Butter was too valuable to cook with in the GDR. Guten Appetit.

Das isst man lieber im Winter 😊im Sommer schmecken Kartoffeln mit Kräuterquark oder eingelegtem Fisch wesentlich besser. Ihr solltet mal Bratkartoffen, Speck und Zwiebeln mit Blut und Leberwurst braten. Heisst hier bei uns Kaminfeger, dazu ein Endiviensalat....herrlich

Not in Thuringia, also East Germany. We eat the Blutwurst on bread. It was once served in school in the 80s. It was disgusting. Sausage is something I rarely eat, but if I do it is Thuringian. I live in NRW now.

My Oma use for make Warm German Potato Salad. Is this a ‘real’ German side dish or some USA made up food? It’s really tasty,sweet n Tangy.

No, its real, but the Bavarian variant. We like our potato salad lukewarm. (Hot boiled potatoes, boiled *with* the peel, then peeled hot and sliced and soaked with some hot broth. And only at the end we add oil, vinegar, pepper and salt to taste.)

Das hat man schon gegessen, als Eastern Germany noch aus vielen kleinen Einzelstaaten bestand, die nach seinen Fürsten benannt waren. In Südniedersachsen und Nordosthessen kennt man es auch als Tote Oma. Unter anderem regionalen Namen taucht die Grützwurst auch in der hessischen und fränkischen Rhön auf. In Oberhessen und im Westerwald bereitet man es anders und doch ähnlich zu. So ähnliche Gerichte findet man überall im ländlichen Europa, wo man viel Schwein aß und isst. Schon die alten Spartaner haben Blutsuppe aus Schweineblut gegessen, die Schweden haben ihre Blutklößchen, die Esten was, was ich nicht schreiben kann. Nur reiche Städter konnten sich leisten, Igitt zu schreien und Blutwurst zum arme Leute Essen werden zu lassen und selbst nur Kotelett und Filet zu essen.

The reassurance that it tastes like a 4'n'20 Meat Pie isn't really helping me, mate. I have an issue with the idea of consuming 'blut'.... but good on you for trying it for the rest of us!! :D

Think about Mett - raw pork! It is minced, seasoned with salt and pepper, put on a bread roll and covered with raw onion rings (or a diced raw onion).

@@Astrofrank Yeah, I'm of mixed opinions about Mett. On one hand, it's safe to eat because Germany has extremely high standards regarding food. On the other hand, it's raw pork. However, since I eat sushi and sashimi without hesitation, I probably would try Mett. I just have strange issues when it comes to offal.

@@KenMiller I can understand that eating raw meat can be be a problem for someone who is not accustomed to it, as well as eating clotted blood, and that's totally okay. But on the other hand, both can taste surprisingly well. Blood sausage is also known since ancient times: "There are some goats’ paunches down at the fire, which we have filled with blood and fat" - these words are taken from Homer's Odyssey!

@@Astrofrank there are solid reasons for consuming blood, especially from a historical context. In many cultures, blood was a readily available source of iron, and so was an important and necessary means of supplementing their diet. Naturally, that doesn't apply to modern society. And I'm not saying that anyone else should stop eating blutwurst, mett, etc. Just that I have a mental 'block' when it comes to the thought of consuming these things.

@@KenMiller That's what I wanted to say. I would have a problem with eating insects, despite it is possible to buy burgers based on them even in Germany. But in the Odyssey, the winner of a contest was allowed to choose the best one of the blood sausages, so they might have been considered as especially "yummy".

"Tote Oma" oder "Tote Tante" kenne ich nur als alkoholische Getränke. Bei den Namen hat man noch nicht alle Verwandten durch !!! Dann solltest du mal hier in Norddeutschland "Schwarzsauer" probieren.....

Hilfe..ich musste es als Kind leider ertragen dieses zu essen und ich hab heutzutage noch immer Magenkrämpfte wenn ich nur dran denke wie ekelig das schmeckt....Dir scheint es ja zu schmecken :-)..naja wenn es schmeckt....;-))!!! Hoffe DU/Ihr vesteht meinen Kommentar richtig !!!
