The crispy rice at the bottom of the pot is also a dish in Iran called Tahdig. Which translates to "Bottom of the pot". They don't mix it with water, but instead flip the whole pan over so it falls onto the plate in the shape of the pot, then you can cut it into slices, so everyone gets the steamed rice, as well at the tahdig. I prefer to add saffron to my rice as well as a bit of yoghurt. When I lived in England, my best friends were Iranian, so I had this every time I went to their house, and it is the best thing in the world
@Silvylocks9 жыл бұрын
Haha I'm so glad you mentioned this, because my family is Iranian and eats it as well! It's super delicious and when it's cooking in the house, it smells like popcorn! So I totally understand what Martina was saying in the video about the flavor/smell.
@AmusedToast9 жыл бұрын

HaHa Awesome the Burnt Rice thing is actually common for Us Puerto Ricans, We love it and we call it 'Pegao" because the rice literally 'Got Stuck" to the bottom of the pot. Its like the delicious flavors have combinedat the bottom. Some people think the burnt or hard bottom is unfortunate, but its Delicious!!! Try it with rice, sazon(reddish seasoning) and hotdogs in the rice!

1:54 what Martina is eating looks like what I ate before which was THE MOST DELISH KOREAN SIDE DISH EVARRRR I ate it in jeju and it tasted a little like cuttlefish but not the dried kinds you get in Asia --- more like sweet savoury cuttlefish that's still chewy and moist but it disintegrates the same way as dried cuttlefish. It's SUPER GOOD.

Similar dishes are becoming popular here in the States, too. To make it sound more appetizing, many places refer to the meat by its Spanish names, _cabra_ or _cabrito_.

We don't mix it with water, but Spanish people make their rice in pots instead of rice cookers, and we always let the bottom layer get super crunchy. Everyone fights for it at the dinner table. Its awesome that Koreans have a similar thing! :)

That escalated quickly! xD And just fyi if anybody is interested in how you make your stew meat tender. It's all about time. Basically any meat goes tough at first (what you call overcooked) and then aprox in double that time it goes tender again. So that's basically the secret to making really delicious stew, 3-4 hours of simmering.

we have korean goat stew in america. theres a really good one in jersey called new bang's kitchen. Its amazing. you can get the stew alone or their meal. its like a three course meal. first they serve the goat meat on a bed of scallions . the second course is the stew. when the stew is boiled down they add rice and fry the rice in the left over stew. its so delicious. im drooling right now watching this video and thinking about how delicious goat stew is AHHHHH

I am having trouble keeping my saliva in my mouth... that looks so good.. the thick gravy like soup reminds me of goat I had in a Greek restaurant which was so good. I can only imagine this meal was better. And zucchini pajong ( err is that even how it's spelled?) looked great as well. It is zucchini is in season right now. We have a drawer in the fridge stuffed with zucchini from our garden. I am going to sneak over to your recipe video to try and make it! Was it all zucchini or did it also have green onions?

Neat video! I'm West Indian (the whole family is) and this is normal to me - the goat and the rice stuff. Only my mom said as a child, they used to wait until the rice was done and whatever was at the bottom they would eat it just like that. Sometimes it would be regular rice sticking and then some would be like a thin wafer. I thought was kind of strange until I did it - it's not bad, although I'm not sure how healthy that is...lol! I miss meat sometimes, I really do.
